    cup Italian bread crumbs

    cup Pecorino Romano cheese, grated (You can sub with Parmesan)

    garlic cloves, minced

    Tbsp Italian parsley

    Tbsp fresh mint

  • Salt and pepper to taste

  • cup extra virgin olive oil

    large mushrooms, stemmed


Preheat oven to 400 degrees Stir bread crumbs, Pecorino Romano, garlic, parsley, mint, salt and pepper in a medium bowl and blend well. Drizzle a heavy large baking sheet with 1 Tbsp olive oil, to coat. Spoon filling into mushrooms and arrange on baking sheet, cavity side up. Drizzle remaining oil over the filling of each mushroom. Bake until tender, about 25minutes.
