Coconut Chicken Curry in the Slow Cooker

This is an Indian style curry, cooked in a Crock Pot

Ingredients
- 2 lb chicken
- 1 whole onion, peeled and halved
- 2 clove galic, peeled
- 1 bell pepper, seeded and quartered
- 1 can tomato paste
- 1 can coconut milk
- 1 1/2 tsp salt
- 1 tbsp curry powder
- 1 tbsp garam masala
- 2 dry red chili peppers* (if you want spicy)
- 2 tbsp water
- 1 1/2 tbsp cornstarch
- coriander

Preparation
Step 1
1. Place chicken in slow cooker.
2. Place the rest of ingredients (except chili pepper, cornstarch, water and coriander) in a food processor and process until smoothish. Pour sauce mix on top of chicken, mix well, add hot peppers if using any, then close lid. Cook on low for 6 hours.
3. One hour before serving, mix together water and cornstarch until completely dissolved. Add to chicken curry and mix well. Place lid back on for remainder of cook time
4. Serve on steaming rice, jasmine or basmati.
