BBQ Rub (for pulled pork or chicken)

Combine all and mix well with whisk
- 1 cup brown sugar
- 1 cup paprika (or smoked paprika)
- 12 TB black pepper
- 12 TB coarse salt
- 1/2 cup smoked salt or hickory flavored powder
- 8 TB garlic powder
- 8 TB onion powder
- 8 TB celery seed
- 1/4 cup chili powder or cayenne pepper
Brown Butter Salted Caramel Cookies

1. In a medium bowl, Whisk together the flour, baking soda, cream of tartar, cinnamon, and salt
- For Rolling the Cookies:
- 2 1/2 cups all-purpose Gold Medal flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 1 cup unsalted butter, sliced
- 1 1/4 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 1 tablespoon plain Greek yogurt
- 1 cup caramel squares, cut into 1/4's
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- Sea salt, for sprinkling on top of cookies
Hermit Cookies

Chill at least 1 hour. Drop by rounded teaspoons about 2 inches apart on a greased baking sheet
- Mix:
- 1 c. shortening
- 2 c. packed brown sugar
- 2 eggs
- Stir in:
- 1/2 c. cold coffee
- Add:
- 3 1/2 c. flour
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- Add:
- 2 1/4 c. raisins
Zucchini Cookies

Cream together sugar, butter, egg
- 1 cup zucchini, grated
- 1 cup brown sugar
- 1/2 cup butter
- 1 egg
- 2 cup flour
- 1 tsp soda
- 1 1/2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp salt
- 1 *1 cup chopped nuts
- 1 *1 cup raisins
- 3/4 *3/4 c. chocolate chips
- *optional ingredients
Crab Rangoon

Instructions 1. Preheat 1 inch of oil to 325 degrees over medium heat
- 1 5oz can of crab meat, drained (can be substituted with fresh or packaged crab)
- 4 oz cream cheese, softened
- 1 green onion, finely sliced
- 1/4 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 18 won ton wrappers
- oil for frying

- 1 cup pineapple juice
- 1/2 cup brown sugar

Holy Moly Chicken Frijole Meatloaf

1. Lightly sauté first 9 ingredients in canola oil till softened
- 1/2 c drained frozen corn
- 1/2 c drained black beans
- 1/2 c diced red onion
- 1/3 c diced red peppers
- 1/3 c diced yellow peppers
- 1/3 c. diced green peppers
- 1 T minced garlic
- 1/8 tsp fine sea salt
- 1/8 tsp ground black pepper
- 1 tbsp canola oil
- 1.5 lbs fresh ground chicken (mix of dark and white meat)
- 3 fl oz fresh lime juice (strained)
- 1 egg
- 2 cups panko bread crumbs
- 1/4 c fresh chopped cilantro
- 3/4 c petite diced tomatoes (drained)
- 1/2 tsp paprika
- 1 1/2 tsp coarse sea salt
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp chili powder
- 1 tsp cumin
- 3 tbsp sour cream
Maple Bacon BBQ Sauce (for wings)

1. While the ribs are braising, prepare the sauce
- Maple Bacon BBQ Sauce
- 8 slices of bacon, diced
- 1/2 large onion, diced (or 1 medium onion)
- 1 cup ketchup
- 1/2 cup applesauce
- 1 cup maple syrup (the real stuff)
- 1/4 cup cider vinegar
- 2 tbsp. soy sauce
- 1 tsp. mustard powder
- 3 tbsp. brown sugar
Walnut Slices

follow steps above, very easy
- Step 1---preheat oven 350°
- 1/2 lb. butter
- 2 cups flour
- 1/2 cup sugar
- 1/2 cup cornstarch
- cream butter sugar, sift if flour cornstarch and press into 11 x 17 jelly roll pan bake for 15 minutes. While baking begin step 2
- Step 2---300° 15 min/350° 5 minutes
- 4 eggs
- 1 TB flour
- 2 TB vanilla
- 1 pkg. coconut (8-12 oz)
- 1 pkg. brown sugar (1 lb box)
- 1/2 tsp baking powder
- 4 cups walnuts, very finely chopped
- Beat eggs brown sugar until light add flour baking powder vanilla and beat. Add nuts coconut. Spread over crust while still hot and Bake at 300* for 15 minutes increase heat to 350° and bake additional 5 minutes. Let cool completely.
- Step 3---topping
- 1 cube butter (1/2 cup)
- 1 pkg. powdered sugar (1 lb box)
- 1 8 oz pkg. cream cheese
- dash of flavoring (almond or vanilla)
- Mix thoroughly and spread over bars. Cut into small squares as these really are very very rich but very good.
Chow Mein pw

Directions Bring a pot of water to a boil and cook the noodles according to the package directions
- 8 ounces thin lo mein noodles
- 1 tablespoon peanut oil
- 1 carrot, julienned
- 1/2 head napa cabbage, sliced thin
- 1/2 onion, sliced
- 1/4 cup chicken broth
- 1/4 cup low-sodium soy sauce
- 1 teaspoon sesame oil
- Sliced green onions, for topping
