Salmon and Guacamole Sandwiches

Preheat the oven to 400 degrees
- 8 slices applewood-smoked bacon (8 ounces)
- 2 ripe avocados, seeded and peeled
- 1/4 cup freshly squeezed lime juice (2 limes)
- 4 scallions, white and green parts, chopped
- 1/4 cup minced red onion
- 1 tablespoon jalapeno pepper, seeded and minced
- 1 teaspoon minced garlic
- Kosher salt and freshly ground black pepper
- Four (6-ounce) salmon fillets, skin on

Directions: 1. Cook ground turkey in skillet until browned
- Ingredients:
- 1 pound ground turkey (or ground beef)
- 1 packet taco seasoning mix
- 3/4 cup water
- 1 can (16 oz.) diced tomatoes
- 1 can (16 oz.) pinto beans, drained & rinsed
- 2 cups tortilla chips or broken taco shells
- 1 cup shredded cheddar cheese
- 4 green onions
- 1 red bell pepper, diced
- 1 cup lettuce, chopped
Southwestern Chopped Salad

{Instructions} Making the dressing: puree all ingredients in a food processor/blender until smooth
- Large head of Romaine 15 oz.
- 1 can of black beans, rinsed and drained
- 1 large orange bell pepper
- 1 pint cherry tomatoes
- 2 cups corn (fresh or frozen, thawed)
- 5 green onions
- Optional: avocado
- {Dressing}
- 1 cup loosely packed cilantro, stems removed and roughly chopped
- 1/2 avocado (or 1/2 cup plain vegan yogurt or Greek yogurt)
- 2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
- 1-2 garlic cloves
- 1/4 cup olive oil
- 1 1/2 tsp. white wine vinegar
- 1/8 tsp. salt

- 2 pounds fresh tomatillos, husks removed
- 4 jalapeños, halved lengthwise and seeded
- 1 cup packed fresh cilantro leaves
- 1 tablespoon minced garlic
- 1 tablespoon fresh lime juice
- 1 onion, chopped
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 pounds boneless skinless chicken breasts, cut into 1/2-inch pieces
- 2 tablespoons vegetable oil, divided
- 6 cups chicken broth
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1/2 teaspoon ground coriander
- Garnish: fried corn tortilla strips

- 2 teaspoons chopped fresh oregano
- 1/8 teaspoon red pepper flakes
- 4 ounces gemelli or penne pasta

- 3 Tbsp fresh Lime Juice
- 2 Tbsp Extra Virgin Olive Oil
- 1/2 cup fresh cilantro, chopped
- 1/8 tsp fresh cracked Pepper, to taste
