Braised Baby Artichokes

Fill a large bowl with water
- 3 lemons
- 24 baby artichokes
- Extra-virgin olive oil
- 6 cloves garlic, smashed and finely chopped
- 3 anchovy fillets (optional, but highly recommended!)
- Pinch of red pepper flakes
- 1 cup dry white wine
- 1 bunch thyme, tied with kitchen twine
- Kosher salt
- 1/2 cup chopped fresh parsley
- Parmigiano-reggiano cheese, for shaving
Mixed olive crostini

•In a small bowl, combine the first six ingredients; stir in mozzarella cheese and parsley
- 1 can (4-1/4 ounces) chopped ripe olives
- 1/2 cup pimiento-stuffed olives, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, softened
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 3/4 cup shredded part-skim mozzarella cheese
- 1/4 cup minced fresh parsley
- 1 French bread baguette (10-1/2 ounces)
Asian beef with snow peas

1.In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons rice wine
- 1 tablespoon brown sugar
- 1/2 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 tablespoon minced fresh ginger root
- 1 tablespoon minced garlic
- 1 pound beef round steak, cut into thin strips
- 8 ounces snow peas
Crispy edamame

- 1 (12 ounce) packagefrozen shelled edamame (green soybeans)
- 1 T olive oil
- 1/4 C grated Parmesan cheese
- 1 T minced fresh garlic
- salt & pepper
Green beans with almond pesto

Combine all ingredients except green beans in food processor
- 1/2 C chopped fresh basil leaves
- 1/2 C chopped fresh parsley
- 1/2 C sliced almonds toasted
- 1 large clove garlic pressed
- 1/3 C extra virgin olive oil
- 1 lb fresh green beans
Pesto Straws

Preheat oven to 400 degrees
- 1 package frozen puff pastry sheets, thawed
- 1 cup pesto
- 1 egg, whisked slightly
- 1/4 cup parmesan cheese
Holiday Cranberry Sauce

1.Place the cranberries in a medium-size sauce pot and add enough water to cover
- 2 cups fresh cranberries
- 1 (20-oz) can crushed pineapple
- 1 (11-oz) can mandarin oranges, drained
- 1 Tbsp raw honey
Zesty meatball noodle soup

Combine broth, tomatoes, 1 t garlic, cumin in a pot
- 2 cans chicken broth
- 1 can diced tomatoes
- 1 T minced garlic
- 1 t cumin
- 1 C shredded jack cheese
- salt & pepper
- Fettuccine cut into 2 inch lengths
- 1 C corn
- 1 lb ground beef
Velveeta macaroni & cheese

Heat oven to 350. Melt 2 T butter
- 1/2 C butter, divided
- 1/4 C flour
- 1 C milk
- 1/2 lb (8oz) velveeta, cut into cubes
- 2 C elbow macaroni
- 1/2 C shredded cheddar cheese
- bread crumbs
Linguine pesto with italian chicken strips

- 8 ounces uncooked linguine
- 1 package (6 ounces) ready-to-use grilled Italian chicken strips
- 1 cup (4 ounces) shredded sharp cheddar cheese
- 3/4 cup frozen corn, thawed
- 1 jar (3-1/2 ounces) prepared pesto
- 1/4 cup seasoned bread crumbs
- 1/4 teaspoon pepper
