Beef & tortellini marinara with green beans

•In a large skillet, brown beef in oil until no longer pink
- 1 pound beef stew meat
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 jar (26 ounces) marinara or spaghetti sauce
- 2 cups dry red wine or beef broth
- 1 pound fresh green beans, trimmed
- 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
- 1/2 pound small fresh mushrooms
- 2 envelopes thick and zesty spaghetti sauce mix
- 2 tablespoons minced fresh parsley
- 1 tablespoon dried minced onion
- 2 teaspoons minced fresh rosemary
- 1 teaspoon coarsely ground pepper
- 1/4 teaspoon salt
- 1 package (9 ounces) refrigerated cheese tortellini
Savory grilled artichokes

Cook artichokes. Let cool and cut in half lengthwise
- 4 artichokes
- 1/4 C balsamic vinegar
- 1 //4 C water
- 1/4 soy sauce
- 1/4 C olive oil
- 1 T minced ginger
- 1 clove garlic, minced
Skillet Chicken & Ravioli

What a wonderful dish! Great taste and so easy to make
- 1 (9-ounce) package small cheese ravioli
- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 1 1/4 pounds chicken breasts, skinless, boneless, cut into chunks
- Freshly ground pepper
- 8 ounces white mushrooms, halved
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, thinly sliced
- 2 tablespoons red wine vinegar
- 1/3 cup low-sodium chicken broth
- 2 tablespoons parmesan cheese, grated
- 1/4 cup fresh parsley, basil or a combination, chopped

- 2 packages (8 oz each0 room temperature
- 1 C ricotta cheese
- 3 eggs
- 1/2 C parmesan cheese
- 6-7 oz jar pesto
- 14 oz jar drained roasted red peppers, pureed in food processor
- 1/2 t pepper
Turkey broth

Cut the carcass into 4 or 5 pieces
- turkey carcass
- 2 onions cut into chunks
- 2 carrots cut in chunks
- 3 celery stocks cut in chunk
- 1 bunch fresh parsley
- 4 cloves garlic smashed (unpeeled)
- 1 t black peppercorn
- 2 bay leaves
Turkey Gnocci Soup

You'll be surprised at how quickly this soup comes together after the veggies and turkey are chopped
- 1 tablespoon butter
- 3 medium carrots, chopped
- 4 cloves garlic, minced
- 6 cups water
- 3 teaspoons reduced-sodium chicken base
- 3/4 teaspoon Italian seasoning
- 1 (16-ounce) package potato gnocchi
- 2 cups turkey breast, cooked, cubed
- 1 cup frozen peas
- 1/2 teaspoon pepper
- 1/2 cup Parmesan cheese, shredded
Chicken, black bean & cilantro soup

In a large heavy soup pot, saute onions and celery in olive oil 3-5 minutes, until soft but not browned
- 1 small onion, diced small
- 1 cup celery, diced small (use celery leaves too if available)
- 2 tsp. olive oil
- 1 T ground cumin
- 1 T chile powder
- 1 tsp. celery seed
- 1 tsp. garlic powder or garlic puree
- 4 cups homemade chicken stock (or 2 cans chicken broth)
- 1 can vegetable broth
- 1 can petite diced tomatoes
- 1 cup salsa (I used Pace Picante Sauce)
- 6-8 drops Green Tabasco Sauce or your favorite hot sauce (taste to see if you want this)
- 1 or 2 cans black beans (not drained unless you choose to rinse the beans to reduce the amount of sodium)
- 2 cups cooked chicken, cut in very small pieces (leftover rotisserie chicken is great for this)
- 1 cup chopped cilantro leaves and stems (chop the stems very small), plus more for serving if desired
- 3 T fresh lime juice
- cut limes, for serving (optional)
Cuban style chicken strips

Mix marinade in non reactive (non metal) bowl
- Marinade: 6 garlic cloves, 1 med onion, 1 C fresh lime juice, 1/2 C rum
- Boneless skinless chicken
- cumin
- oregano
- oil for frying
- salt & pepper
- 1 egg beaten with 2 T water
Cranberry Relish

- 2 pounds fresh cranberries
- 1 cup sugar
- 1/4 cup Grand Marnier liqueur
- 1 orange, zested and juiced

- 1 T minced garlic
- 2 t ginger
- 1/2 c mirin
- 1 T honey
- 2 t sesame oil
- 2 T hoisin sauce
- 1/2 t chinese 5 spice powder
