Basic Preparation of Wild Rice

Bring to boil Simmer covered 40-50 minutes til most of liquid is gone
- 1 c. uncooked wild rice
- 3-4 c. water
- 1 t. salt
Pasta Fagioli Soup

From Lunds and Byerlys
- 2 10 oz. packages Lunds & Byerlys Chicken Noodle soup, thawed
- 8 oz. Italian sausage
- 1 T. olive oil
- 1 c. chopped zucchini
- 2 t. minced garlic
- 1 14.5 oz. can diced tomatoes, drained
- 1 19 oz. can cannellini beans, rinsed, drained
- 1/4 t. crushed red pepper
- 2 T. minced fresh basil
- 4 T. grated Parmesan cheese
Mandarin Orange Lettuce Salad

Just before serving, add the dressing and almonds
- Simmer: 2 T. vinegar
- 4 T. olive oil
- Dash of pepper
- 2 T. sugar
- 1/4 t. salt
- Add: 1 t. almond flavoring
- Chill
- Carmelize: 1/2 c. slivered or sliced almonds--1/4 c. + 2 T. sugar
- Pour out on plate to cool
- Combine: 1/2 head lettuce
- 2 green onions, finely chopped
- 1 c. chopped celery
- 1 med. can mandarin oranges, drained
Pulled Pork Sandwiches

In bowl, combine brown sugar, salt, paprika, pepper, thyme, coriander, mustard powder, fennel and garlic powder
- 1/4 c. lightly packed dark borwn sugar
- 2 T. kosher salt
- 2 T. paprike
- 1 T. freshly ground pepper
- 1 t. dried thyme
- 2 t. ground coriander
- 1 T. dried English mustard powder
- 2 t. ground fennel seed
- 2 t. garlic powder or onion powder
- 1 boneless pork shoulder, 3-4 lb.
- 6 garlic cloves, peeled
- 1 1/2 c. apple juice
- 1/2 c. water
- Soft white dinner rolls for serving
- BQ sauce for serving
