Capt. Morgan Coconut Rum Drink

A delicious summer drink!
- 1 1/4 oz. vodka
- 1/4 oz. Capt. Morgan Parrot Bay Coconut Rum
- 1/2 oz. pineapple juice
- 1 T. orange juice
- 2 orange slices

Bring a large pot of lightly salted water to a boil
- 2 cups seashell pasta
- 1/4 cup brown sugar
- 1 cup creamy salad dressing (e.g. Miracle Whip)
- 2 teaspoons lemon juice
- 1 tablespoon distilled white vinegar
- 1 pinch salt
- 2 cups chopped celery
- 1/2 cup chopped green bell pepper
- 1 onion, chopped
- 3 boneless chicken breast halves, cooked and cut into bite-sized pieces

- 1/4 cup flour
- 2/3 cup water or more--don't want juice to be too gooey
- 1 envelope (1 oz.) onion soup mix
- 3 to 3 1/2 pound boneless beef chuck pot roast
- 1 tablespoon dried thyme (optional)
- 6 to 8 small (1-inch in diameter) whole red potatoes
- 1 medium onion, cut in quarters
- 1 package (16 oz.) peeled baby carrots

Mango-Pineapple Crab Salad

Whisk together first 6 ingredients and 2 T
- 1/2 c. extra virgin olive oil
- 1/4 c. fresh lime juice
- 3 T. seasoned rice vinegar
- 2 T. honey
- 1 large garlic clove, grated
- 1 T. coarsely chopped fresh cilantro
- 4 T. chopped fresh chives
- 1 pound jumbo lump crabmeat
- 2 C. sliced peeled mangoes(about 2)
- 2 C. cubed pineapple
- 1/2 c. thinly sliced red onion
- 1 ripe avocado, cubed
- 1 head Bibb or butter lettuce
- Freshly ground black pepper
- Cilantro sprigs
Oven-Roasted Asparagus

Preheat oven to 425 Drizzle asparagus with oil in a large bowl and toss to coat
- 2 bunches thin asparagus, trimmed
- 4 T. olive oil
- 3 T. grated parmesan cheese
- 2 cloves garlic, minced
- 1/2 t. salt
- 1/2 t. black pepper
- 2 T. lemon juice

- 2 oz. bourbon
- 1 oz. light rum
- 2 oz. freshly squeezed orange juice
- 1 oz. freshly squeezed lemon juice

- Marinade:
- 1/4 c. fresh lemon juice
- 1 T minced fresh cilanto
- 1 t. groun cumin
- 1/4 t. crushed red pepper
- 3 garlic cloves, crushed
- 4 (6 oz.)sea bass fillets about 1 inch thick.
- Spice Rub:
- 2 T ground coriander
- 2 t. freshly ground black pepper
- 1 t. caraway seeds
- 1 t. ground cumin
- 1 t. paprika
- 1/4 t. salt
- Remaining ingredients;
