Shrimp and Zucchini Scampi

- 1 1/2 pounds shelled, deveined shrimp
- 2 T. olive oil
- 2 medium zucchini, sliced
- 4 cloves garlic, chopped
- 4 T. butter
- 3/4 c. white wine
- 1/8 t. salt
- 2 t. grated lemon peel
- Chopped parsley
- 1 pound linguine pasta
- 1/4 c. pasta cooking water
Chicken Quesadillas

Combine water, vinegar, oil and Fajita seasoning in large plastic bag of glass dish
- 1/4 c. water
- 2 T. vinegar
- 2 T. vegetable oil
- 1 lb. boneless, skinless chicken breast, cut into thin strips
- 1 pkg. fajita seasoning
- 2 c. shredded mixed Monterey Jack and Cheddar cheeses
- 3 green onions, thinly sliced
- 8 large flour tortillas
Soup Beans w/Ham

This recipe was adapted from a Better Homes and Gardens recipe served as a side dish, but for me, it works better ...
- 1 pound dried pinto beans, white beans such as navy beans, or black beans
- 8 ounces country ham, leave whole-I used a pre-sliced bone-in ham
- 1 cup finely chopped onion
- 1/2 teaspoon kosher salt or 1/4 tsp. salt.
- 1 14 1/2 ounce can whole tomatoes, drained
- 1 cup finely chopped onion
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon kosher salt (optional) or 1/4 tsp. salt
- 1/4 teaspoon ground black pepper
Chicken and Bacon Chowder

Smoky bacon and the heat of a little cayenne pepper give this otherwise traditional chowder a serious kick
- 4 slice(s) thick-cut bacon, chopped
- 3 stalk(s) celery, finely chopped
- 2 medium shallots, finely chopped
- 1/4 teaspoon(s) cayenne (ground red) pepper
- 1/2 cup(s) all-purpose flour
- 1 quart(s) lower-sodium chicken broth
- 1 pound(s) skinless, boneless chicken thighs
- 1 pound(s) red potatoes, cut into 1/2-inch chunks
- 2 cup(s) whole milk
- 2 cup(s) fresh or frozen corn
- Thinly sliced basil, for garnish
- Oyster crackers, for serving

- 1/2 t. vanilla extract
- 1 pkg. (3.4 oz) instant vanilla pudding mix
- 1 env. whipped topping mix
- You may add vodka to this recipe for an alcoholic drink.
Banana Cream Pie

- Graham cracker crust:
- 1 sleeve (9 whole crackers) graham crackers
- 1/4 c. light brown sugar
- 1/4 tsp. freshly grated nutmeg, optional
- Pinch salt
- 6 tbsp. unsalted butter, melted
- Filling:
- 2 c. (1 pint) half-and-half
- 1/2 c. milk (1 or 2 percent is fine)
- 1/4 c. light brown sugar
- 1/4 c. granulated sugar
- 1/3 c. cornstarch
- 3 egg yolks, beaten
- 2 tbsp. butter
- 1 tsp. vanilla
- 2 to 3 ripe bananas
- 1 c. heavy whipping cream, whipped with 2 tbsp. powdered sugar
Snicker Salad
