Ingredients

  • 2 10 oz. packages Lunds & Byerlys Chicken Noodle soup, thawed
  • 8 oz. Italian sausage
  • 1 T. olive oil
  • 1 c. chopped zucchini
  • 2 t. minced garlic
  • 1 14.5 oz. can diced tomatoes, drained
  • 1 19 oz. can cannellini beans, rinsed, drained
  • 1/4 t. crushed red pepper
  • 2 T. minced fresh basil
  • 4 T. grated Parmesan cheese

Preparation

Step 1

Cut soup pouch open; transfer soup to a bowl and set aside.
Form sausage into 12 mini meatballs.
Heat oil in skillet over medium-high heat.
Brown meatballs 4-5 minutes, transfer to plate.
Saute zucchini and garlic in skillet 2-3 minutes.
Stir in tomatoes, soup, beans, crushed red pepper, and meatballs.
Reduce heat to medium and simmer 10 minutes.
Stir in basil and Parmesan cheese.
