Barb's Lasagna

In Dutch oven: brown gr. beef, onion, & garlic
- Sauce:
- 1 cup minced onion 1 clove minced garlic
- 1 1/2 lb. very lean ground beef
- Large (2#-3oz.) can tomatoes 6 oz. can tomato paste
- 8 oz. can tomato sauce 1/2 cup red wine
- 1 tsp. salt 2 Tb. sugar
- 1 tsp. basil 2 tsp. oregano
- 2 Tb. Worcestershire sauce Few drops Tobasco sauce
- Lasagna:
- 1 # lasagna noodles (12 noodles) Sm. carton skim Ricotta cheese
- 1 1/2 lb. low fat Mozzarella cheese 4-6 oz. Parmesan cheese
Moscow Mule

A great refreshing drink on a hot summer day! For a special touch, serve it in a copper mug
- 2 oz. vodka
- 1/2 oz. lime juice
- 5 oz. ginger beer
- Sprig of mint and lime for garnish
Cobb Salad Grilled Chicken

In a small bowl stir together onion, vinegar, mustard, and a pinch salt; let stand at least 30 minutes
- 1 cup chopped red onion
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon-style mustard
- Coarse salt and freshly ground black pepper
- 4 skinless, boneless chicken breast halves, pounded evenly to 3/4 inch thickness
- 3 tablespoons olive oil
- 2 hard-cooked eggs, peeled and halved
- 1 ripe avocado, halved, pitted, peeled, and sliced
- 2 ounces blue cheese
- 1 head romaine lettuce, torn (8 to 10 cups)
- 6 slices bacon, crisp-cooked and coarsely crumbled
Spaghetti Bake

Directions 1.Preheat oven to 350 degrees F
- 12 ounces dried spaghetti
- 1 pound lean ground beef
- 1 cup chopped onion (1 large)
- 1 cup chopped green sweet pepper
- 1 28 ounce can diced tomatoes, undrained
- 1 4 ounce can (drained weight) sliced mushrooms, drained
- 1 2 1/4 ounce can sliced pitted ripe olives, drained
- 1 1/2 teaspoons dried oregano, crushed
- 2 cups shredded cheddar cheese (8 ounces)
- 1 10 3/4 ounce can condensed cream of mushroom soup
- 1/4 cup water
- 1/4 cup grated Parmesan cheese
Banana Split Smoothies

This smooth and thick beverage tastes just like a banana split
- 2 medium ripe bananas
- 1 c. (8 oz.) crushed pineapple, drained
- 1 1/2 c. milk
- 1/2 c. fresh or frozen unsweetened sliced strawberries
- 2 T. honey
- 5 ice cubes
- Whipped topping, chocolate syrup and maraschino cherries
Grilled BQ Ribs

These ribs are wrapped in aluminum foil and grilled over indirect heat
- 3-5 lbs. ribs, cut
- 1 T. brown sugar
- 2 t. garlic powder
- 1 1/2 t. black pepper
Classic Rice Pilaf with Edamame

If jasmine rice is unavailable, use basmati or another long-grain white rice
- 1/2 c. vermicelli noodles
- 6 T.(3/4 stick) unsalted butter
- 1 c. jasmine rice
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 10 oz. frozen shelled edamame
- 1/4 c. chopped fresh dill
- 1 3/4 c. vegetable broth
- 1/4 c. water
Mexican Tortilla Soup

Heat the oil in a 6 qt. saucepot over medium-high heat
- 1 t. canola oil
- 1 large onion, diced
- 2 jalapeno peppers, seeded and chopped(optional)
- 2 T. tomato paste
- 1/2 c. frozen whold kernel corn
- 1 c. black beans, rinsed and drained
- 1 can diced tomatoes, undrained or 3 small tomatoes, diced
- 1 carton(32 oz.) Swanson Mexican Tortilla Flavor infused Broth
- 2 c. shredded cooked chicken
- Tortilla chips or strips
- Top with cheddar cheese if desired
Everyday Broccoli Cheese Chicken

In skillet over medium heat, in hot butter, cook chicken 10 minutes or until browned on both sides
- 1 T. butter
- 4 skinless, boneless chicken breast halves
- 1 can Campbells Broccoli Cheese Soup
- 1/3 c. water or milk
- 1/8 t. pepper
- 2 c. broccoli flowerettes
Big Game Chili

In a large pot or Dutch oven, brown meat with onions and bell pepper, stirring to break up meat
- 1 lb. Italian sausage
- 1 medium onion, chopped
- 1 bell pepper, finely chopped
- 1 28 oz. can diced tomatoes
- 1 29 oz. can tomato sauce
- 1 27 oz. can kidney beans
- 1 15 oz. can black beans
- 1 Tbsp Worcestershire sauce
- 1 1/2 Tbsp chili powder
- 1 tsp ground cinnamon
- 1 cup Top The Tater
- 1/2 cup shredded cheddar cheese
- 1/2 cup sliced green onion
