Slow Cooker Shredded Turkey Sandwiches Recipe

Place turkey in a 5-qt. slow cooker
- 2 boneless skinless turkey breast halves (2 to 3 pounds each)
- 1 bottle (12 ounces) beer or nonalcoholic beer
- 1/2 cup butter, cubed
- 1 envelope onion soup mix
- 24 French rolls, split
Savory Egg and Sweet Potato Scramble

1. In a medium bowl whisk together eggs, milk, cumin, salt and pepper; set aside
- 8 eggs
- 1/3 cup milk
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon butter
- 2 meduim sweet potatoes (about 1 pound total), peeled, quartered lengthwise and thinly sliced
- 1 green onion, sliced
- 2 cups baby spinach
- Fresh Italian (flat-leaf) parsley
- Bottled hot pepper sauce (optional)

Guajillo Chile Braised Short Ribs

Preheat an oven to 350°F (180°C)
- 3 lb. (1.5 kg) boneless beef short ribs, cut into 3-inch (7.5-cm) cubes
- Kosher salt and freshly ground pepper, to taste
- 2 Tbs. vegetable oil
- 1 jar Tacolicious Guajillo Braising Sauce
- 1 cup (8 fl. oz./250 ml) water
- Warm corn tortillas
- Chopped white onion
- Finely shredded red cabbage
- Grated cotija
- Chopped fresh cilantro
- Hot or mild salsa
Chicken, Lentil and Barley Soup

Directions 1. Rinse and drain lentils; set aside
- 1/2 cup dry lentils
- 1 cup sliced leeks or chopped onion
- 1/2 cup chopped red or green sweet pepper
- 1 clove garlic, minced
- 2 tablespoons margarine or butter
- 5 cups chicken broth
- 1 1/2 teaspoons snipped fresh basil or 1/2 teaspoon dried basil, crushed
- 1 teaspoon snipped fresh oregano or 1/4 teaspoon dried oregano, crushed
- 3/4 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon pepper
- 1 1/2 cups chopped cooked chicken or turkey
- 1 1/2 cups sliced carrots
- 1/2 cup quick-cooking barley
- 1 14 1/2 ounce can tomatoes, cut up

- 1/2 t. salt
- 5 T. shortening
- 2/3 c. sugar

This is a combo recipe from my Wok cookbook
- 4 chicken-breast halves, skinned, boned, and cut into bite-size pieces or 12-16 oz. cooked shrimp--no tails
- 1/4 c. white wine
- 1/2 t. salt
- 2 T. vegetable oil
- 1 green pepper(red okay too), cut into 1/4 inch strips
- 2 c. fresh bean sprouts
- 1 small head bok choy, chopped
- 1 c. snow peas, strings removed
- 1/2 t. salt
- 1/2 c. chicken broth
- 2 t. soy sauce
- Sesame seeds, toasted(optional for chicken)
Healthy Choice Crab Dip

Combine yogurt, mayonnaise, cream cheese and seasonings
- 1/2 c. nonfat yogurt or sour cream
- 1 8 oz. pkg. Healthy Choice fat free cream cheese, softened
- 1 t. prepared horseradish
- 1/2 t. dry mustard
- 1/2 t. worcestershire sauce
- 1/4 t. hot pepper sauce
- 1 c. (4 oz.) Healthy Choice fat free shredded cheddar cheese
- 1/2 lb. imitation crab, flaked
Baked Ziti with Prosciutto & Peas

Cook the pasta Preheat an oven to 425ºF
- 2 Tbs. salt
- 1 lb. ziti, penne or other tubular pasta
- 8 Tbs. (1 stick) unsalted butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 1/8 tsp. freshly grated nutmeg
- 2 cups grated Parmigiano-Reggiano cheese
- 1 cup frozen baby peas
- 1/4 lb. prosciutto or ham, chopped
- 1/2 cup fresh bread crumbs
Home Skillet Frittata

Preheat an oven to 375ºF
- 20 bacon slices, about 9 oz. total
- 1/4 cup plus 2 tsp. vegetable oil
- 1 lb. Yukon Gold potatoes, cut into 3/8-inch dice and simmered until just fork-tender
- Kosher salt and freshly ground pepper, to taste
- 10 eggs
- 1/4 cup heavy cream
- 8 oz. mild cheddar cheese, grated
- 1/2 cup sliced green onions, white and light green portions
