Onion Roasted Potatoes

Preheat oven to 450. In large plastic bag, add all ingredients
- 1 envelope Lipton Onion Recipe Soup Mix
- 2 lb. potatoes, cut into large chunks--red potatoes work nicely
- 1/3 c. olive or vegetable oil

Cook's Country Slow Cooker Beef Brisket and Onions

Heat oil in large skillet over medium-high heat until shimmering
- 1 tablespoon vegetable oil
- 3 large (about 2 pounds) onions, halved and sliced 1/2 inch thick
- 1 tablespoon light brown sugar
- Salt to taste
- 1 tablespoon tomato paste
- 2 tablespoons all-purpose flour
- 3 cloves garlic, minced
- 1-3/4 cups low-sodium chicken broth
- 2 tablespoons plus 1 teaspoon red wine vinegar
- 1 tablespoon paprika
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 5-pounds flat-cut beef brisket, trimmed of excess fat
- 3 sprigs fresh thyme
- 3 whole bay leave
Texas Oven-Roasted Beef Brisket

- 2 tablespoons salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder

- 1 tablespoon sugar

- 4 pounds beef brisket, trimmed

- 10 whole graham crackers (5 oz.) ground fine
- 1/3 c. butter, melted
- 1 lb. cream cheese, softened
- 1/2 c. sugar
- 1 t. vanilla
- 2 eggs
- 10 oz. semisweet chocolate, melted
Tortellini and Vegetable Soup II

This is a favorite with both adults and children--and it couldn't be simpler
- 2 14 1/2 oz. cans vegetable broth or dissolve Knorr's vegetable boullion cubes in hot water--enough to make appox. 4 cups
- 1 15 1/4 oz. can whole kernel corn, drained
- 1 medium leek(white and tender green), rinsed well and chopped
- 2 garlic cloves, crushed through a press
- 1/4 c. chopped fresh basil
- 1 28-oz. can diced peeled tomatoes
- 1 red bell pepper, chopped
- 2 c chopped zucchini(about one medium)
- 1 9 oz. pkg. fresh cheese tortellini
- 1/2 t. garlic pepper
- Grated Parmesan cheese, for serving
Smirnoff No.21 Pomegranate Martini

1.Combine ingredients in shaker with ice
- 1 fluid ounce smirnoff no. 21 vodka
- 1/2 fluid ounce grand marnier
- 1 splash pomegranate juice
- 1 splash tonic water
Baked Potato Frittata

I combine this recipe with Martha Stewart's Potato-Onion Frittata
- 2 russet potatoes, 1 1/4 lb. total, scrubbed and cut into 1-inch dice
- 2 Tbs. olive oil
- Kosher salt and freshly ground pepper, to taste
- 10 thick-cut bacon slices, cut into 3⁄4-inch dice
- 10 eggs
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup plus 1 Tbs. minced fresh chives
- 1/2 cup sour cream
Dar's Veggie/Bean/Pasta Stew

- 2 T. olive oil
- 4 garlic cloves, minced
- 1 medium onion, peeled and chopped
- 6 c. vegetable stock
- 1 28 oz. can chopped tomatoes
- 1/2 c. tomato paste
- 2 medium carrots, peeled and diced
- 2 large stalks of celery, sliced
- 1 c. thinkly sliced Savoy cabbage
- 1/4 c. chopped parsley
- 1 T. chopped fresh basil
- 1 bay leaf
- 1 15 oz. can small cannelloni or white beans
- 1 c. chickpeas
- 1 c.(dry)Fusilli pasta(or any similar pasta)
- Salt and freshly ground pepper to taste
- 3/4-1 c. greated Parmesan cheese
- Can add: few drops of truffle oil, black beans, extra garlic, spinach
