Beef and Barley Soup

All barley is high in fiber, but hulled barley is the most nutrient-dense
- 2 tablespoons extra-virgin olive oil
- 1 pound London broil, cut into 3/4-inch cubes
- Coarse salt and freshly ground pepper
- 1 large onion, chopped
- 1 medium carrot, chopped
- 8 ounces cremini mushrooms, trimmed and thinly sliced
- 2 tablespoons minced garlic (from 4 cloves)
- 2 tablespoons tomato paste
- 3/4 cup dry red wine
- 4 cups chicken stock
- 3 cups water
- 3/4 cup hulled or pearl barley, rinsed and drained
- 1/4 cup coarsely chopped flat-leaf parsley
- Garnish: grated fresh horseradish
Instant Pot Perfected Pulled Pork

From Bob Warden's Great Food Fast pressure cooker recipes
- 1 4-5 1 4-5 4-5 pound pork shoulder or butt
- 2 2T. 2T. light brown sugar
- 1 1 2 T. chili powder 2 t. paprika
- 2 2 2 t. salt
- 1 1 1 t. pepper
- 1 1 1 t. dry mustard
- 1 1 1 T. vegetable oil
- 1 1/2 1 1/2 1/2 c. chicken stock or broth
- 2 2 2 T. cider vinegar
- 1 1 1 t. liquid smoke
- 1 1(16 1(16 oz.)bottle prepared barbecue sauce
- To pulled pork is traditionally smoked, doubling the amount of liquid smoke will help achieve that same smokehouse flavor. To go even more traditional, skip the last step and serve the pulled pork with sauce on the side.

- 1 stalk celery, sliced
- 1 carrot, peeled and diced
- 8 ounces Yukon Gold potatoes, scrubbed and cut into 1-inch pieces

- 1 bunch kale, stems removed, leaves torn into small pieces (4 cups)
- 1 (15-ounce) can navy beans, drained and rinsed
- 2 teaspoons red-wine vinegar

Salmon Ball Recipe

Put the ball in the center of the plate and surround with either veggies or crackers

- 1 – 16 oz. can drained, flaked red salmon
- 1 tsp. lemon juice
- 1 – 8 oz. pkg. low fat cream cheese
- 1/4 C. finely chopped onions.
- 2 tsps. horseradish
- 1/4 tsp. salt (I omit this.)
