Summer Braised Chicken and Vegetables with Good Mother Stallard Beans

In a 6-quart essential pan or a Dutch oven over medium-high heat, warm the olive oil until just smoking
- 1 Tbs. olive oil
- 3 lb. bone-in, skin-on chicken thighs
- Kosher salt and freshly ground pepper, to taste
- 2 large leeks, white and light green portions, halved lengthwise and thinly sliced crosswise
- 1 large red bell pepper, seeded and diced
- 2 large garlic cloves, minced
- 1/2 cup white wine
- 3 cups chicken stock
- 1/2 lb. Good Mother Stallard beans, rinsed, soaked overnight, cooked until tender and drained
- 1 1/2 cups fresh corn kernels
- 1/2 lb. sugar snap peas, trimmed and cut in half on the bias
- 1/2 cup thinly sliced fresh basil
- 1/4 cup chopped fresh chives
- 1 to 2 Tbs. fresh lemon juice
Pineapple Smoothies

This is a not-too-sweet smoothie that's sure to refresh any time of day
- 1 1/2 c. unsweetened pinaapple juice
- 1 c. 1% buttermilk
- 2 c. ice cubes
- 2 cans (8 oz. each) unsweetened crushed pineapple
- 1/4 c. sugar
Water Chestnut Hotdish

- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can water chesnuts, sliced and drained
- 8 oz.-1 lb. leftover turkey, cut up or 2 6 oz. cans tuna, drained
- 1 c. milk
- 1 c. finely chopped celery
- 1/2 c. chopped onion
- 1 T. soy sauce
- 1 small bag chow mein noodles
Cream Peas

- 2 cups frozen green peas, thawed
- 2/3 cup water
- 1/8 teaspoon salt
- 3 tablespoons butter
- 1/3 cup heavy cream

- 1 8 oz. tub Cool Whip
- 4 c. Sara Lee pound cake
- 2 c. sliced strawberries

- 1 medium onion, chopped (1/2 cup)
- 1 large clove garlic, finely chopped
- 1 can (26 ounces) four cheese-flavored spaghetti sauce*
- 1 can (15 ounces) tomato sauce
- 1 teaspoon Italian seasoning
- 2 packages (25 ounces each) frozen beef-filled ravioli
- 2 cups shredded mozzarella cheese (8 ounces)
- 1/4 cup chopped fresh parsley
- You can use your favorite spaghetti sauce.
