Beef Brisket with Dried Fruit

Directions Preheat oven to 325 degrees F
- 1 3/4 cups dry red wine
- 5 pounds beef brisket, trimmed of fat if desired
- Salt and ground black pepper
- Paprika
- 4 onions, coarsely chopped (2 cups)
- 2 bay leaves
- 2 sprigs fresh thyme
- 2 sprigs fresh parsley
- 1 quarts lower-sodium beef broth
- 6 medium carrots, peeled and cut into 1 inch chunks (3 cups)
- 12 ounces tiny new potatoes, halved or quartered (2 cups)
- 1 cup dried prunes
- 1 cup dried apricots
Rigatoni

Brown hamburger and onion, drain In a casserole dish, mix all ingredients together except for the mozzarella
- 1 t. salt
- 1/4 t. pepper
- 1/4 t. garlic powder
- 1/4 t. basil
- 1 lb. hamburger
- 1 medium onion, chopped
- 2- 8 oz. cans tomato sauce
- 3/4 lb. Rigatoni pasta, cooked al dente
- 1 1/2 c. shredded mozzarella

- 1/2 c. butter

- 1 8 oz. pkg. cream cheese
- 1 c. powdered sugar
- 1 8-12 oz. carton of cool whip
- 1 large pkg. vanilla and chocolate instant pudding
- 3 c. cold milk
- 1 chocolate bar, grated
Banana Strawberry Smoothies

- 3/4 c. fat-free milk
- 3/4 c. ice cubes, crushed
- 1/2 c. reduced-fat strawberry yogurt
- 1/2 c. frozen unsweetend strawberries
- 1 small firm banana, chopped and frozen
- Sugar substitute equivalent to 1/4 c. sugar
- You may add most any type of alcohol--rum, vodka, flavored rums, etc.
Pasta alla Carbonara

In a bowl, whisk together the eggs and the 1 1/2 cups cheese
- 3 eggs, at room temperature
- 1 1/2 cups finely grated pecorino romano cheese, plus more for serving
- 2 Tbs. olive oil
- 6 oz. diced guanciale or pancetta
- Kosher salt, to taste
- 1 lb. dried spaghetti
- Freshly ground pepper, to taste

- 4 1/2 cups Rice Chex® cereal
- 4 1/2 cups Corn Chex® cereal
- 1 cup packed brown sugar
- 1/2 cup butter or margarine
- 1/4 cup light corn syrup
- 1/4 teaspoon baking soda
- 1 cup candy-coated chocolate candies
Bacon, Beef & Mushroom Ragu with Macaroni

- 2 tablespoons EVOO
- 1/4 pound lean bacon or pancetta, chopped
- 1/4 pound cremini mushrooms, chopped
- 2 tablespoons chopped fresh thyme
- 1 bay leaf
- 1 pound ground beef
- 1 medium onion, minced
- 2 - 3 large clove garlic, minced
- Salt and pepper
- 3 tablespoons tomato paste
- 2 cups veal or beef stock
- 1 pound long, Italian-style ridged macaroni (called maccheroni rigati or ziti rigate)
- 2 tablespoons butter
- Freshly grated Grana Padano
