French Onion Soup Gratine

Onion soup gratine was inspired by King Henry IV, who after a day of hunting, stopped at a peasant's hut for food
- Caramelized onions
- 1 c. dry white wine (or leftover Champagne)
- 5 c. chicken, vegetable or beef stock or broth
- 2-3 sprigs fresh parsley
- Salt and freshly ground black pepper to taste
- 4-6 slices crusty baguette, toasted
- 1 c. grated Gruyere cheese
- 1 c. grated Parmesan cheese
Vegetarian Baked Beans

Saute the onion in butter Mix all the beans, add onion, ketchup and brown sugar Bake at 350 for 30 minutes
- 1 can butter beans
- 2 cans pinto beans
- 2 cans dark red kidney beans
- 1/2 c. Ketchup
- 1/2 c. brown sugar
- 1 medium onion, chopped
Wave Your Flag Cheesecake

SLICE 1 cup strawberries; halve remaining strawberries
- 4 cups fresh strawberries, divided
- 1-1/2 cups boiling water
- 2 pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin
- Ice cubes
- 1 cup cold water
- 1 pkg. (10.75 oz.) prepared pound cake, cut into 10 slices
- 1-1/3 cups blueberries, divided
- 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1/4 cup sugar
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
Cobb Salad

Place eggs in a saucepan and cover completely with cold water
- 8 slices bacon
- 3 eggs
- 1 head shredded lettuce(whatever kind you prefer)
- 3 c. chopped, cooked chicken meat
- 2 tomatoes, seeded and chopped
- 3/4 c. blue cheese crumbled
- 1 avocado-peeled, pitted and diced
- 3 green onions, chopped
- 1 8 oz. bottle Ranch-style salad dressing
Santa Fe Chicken Pita

Lightly toss together all ingredients except pita bread
- 1 c. canned premuim chunk white chicken, drained, cut into bite size pieces
- 1 c. drained, rinsed black beans
- 1 c. frozen yellow sweet corn, thawed
- 1 c. chopped red bell peppers
- 1/4 c. sliced green onions, bulb and tops
- 1 c. salsa (fresh or bottled)
- 6 pita breads, halved crosswise
Upside-Down Berry Cornmeal Cake

Directions 1. Preheat oven to 350 degrees F
- 2 2 1/2 cups fresh blueberries, raspberries, and/or blackberries
- 1 1/3 cups all-purpose flour
- 1/2 cup yellow cornmeal
- 1 tablespoon finely snipped fresh basil
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 1/2 cup sugar
- 2/3 cup milk
- 1/3 cup canola oil
- Fresh Basil and/or mint (optional)
Spinach-Cheese Swirls

Thses tempting appretizers look like they're difficult to make
- 1 egg
- 1 tbsp. water
- 1/2 cup shredded Muenster cheese
- 1/4 cup grated Parmesan cheese
- 1 green onion, chopped (about 2 tablespoons)
- 1/8 tsp. garlic powder
- All-purpose flour
- 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
- 1 pkg. (about 10 ounces) frozen chopped spinach, thawed and well drained
Ham Loaf for a Crowd

Place a few slices bacon on bottom and two on top
- 3 1/2 lb. ground beef
- 3/4 lb. smoked ham
- 2 t. salt
- 6 T catsup
- 6 T. horseradish
- 1 1/2 c. cracker or bread crumbs
- 3 well-beaten eggs
- 1 1/2 c. whole milk
- 1 c. mushroom stems and pieces
