Asparagus-Stuffed Chicken Rolls Recipe

In a large skillet, bring 1/2 in
- 8 fresh asparagus spears
- 2 boneless skinless chicken breast halves (5 ounces each)
- 1 tablespoon Dijon mustard
- 4 fresh sage leaves
- 2 slices provolone cheese (1 ounce each)
- 2 slices deli ham (3/4 ounce each)
- 1/4 cup all-purpose flour
- 1 egg, lightly beaten
- 1/2 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 1-1/2 teaspoons butter
- 1-1/2 teaspoons olive oil
- 1/4 cup white wine or chicken broth
Orange Chicken

Instructions Combine flour, salt, and pepper
- 2 lbs boneless skinless chicken breasts (cut into 1-1/2” cubes)
- 1 1/2 cups all purpose flour
- 1 eggs (beaten)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Oil (for frying)
- (Orange Chicken)
- 1 cup water
- 2 tablespoons FRESH orange juice
- 1/4 cup FRESH lemon juice
- 1/3 cup rice vinegar
- 2 1/2 tablespoons soy sauce
- 1 tablespoon orange zest (grated)
- 1 cup packed brown sugar (I actually added a little more brown sugar... )
- 1/2 teaspoon ginger root (minced)
- 1/2 teaspoon garlic (minced)
- 2 tablespoons green onion (chopped)
- 1/4 teaspoon red pepper flakes (we added more... again, we like it HOT)
- 3 tablespoons cornstarch
- 1/4 c. water

Stir Fried Beef with peppers and egg noodles

Bring a pan of salted water to the boil for the noodles
- 500 g lean beef steak, such as fillet
- 2 garlic cloves, peeled
- 3 cm piece of ginger, peeled and finely grated
- 1 large red pepper
- 3 spring onions
- 1 red chilli
- 150 g bean sprouts
- 300 g medium egg noodles
- Handful of coriander leaves, chopped
- Soy sauce
- Groundnut oil
- Toasted sesame oil
- Salt and pepper
- FOR THE SAUCE
- 4 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
