Start with the stock by peeling and de-heading the shrimp
- (STOCK)
- 1 pound shrimp, heads on
- 1 tablespoon oil
- 3 medium blue crabs, live
- 2 bay leaves
- 1 head garlic, cut in 1/2
- 1 medium onion
- 2 ribs celery
- 1 carrot
- 2 tablespoons crab boil seasoning (recommended: Old Bay)
- 1 teaspoon crushed red pepper
- 2 tablespoons salt
- 1 gallon water
- (ROUX)
- 1 cup peanut oil
- 4 chicken legs and thighs
- 1 cup all-purpose flour
- (GUMBO)
- 1/2 cup oil
- 1 pound andouille or smoked sausage
- 2 large onions, chopped
- 5 to 6 ribs celery, chopped
- 3 to 4 carrots, peeled and chopped
- 1 large green pepper, chopped
- 1 tablespoon chopped garlic
- (SEASONINGS)
- 2 tablespoons paprika
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon granulated onion
- 1 teaspoon granulated garlic
- 1 teaspoon crushed red pepper
- 1 teaspoon black pepper
- 1 (6-ounce) can tomato paste
- 1 (14-ounce) can diced or stewed tomatoes
- 1 pound cut okra, frozen
Pickled Chipotle Asparagus

found this recipe in a Sunset Bonus Subcribers booklet and thought I would post it in case I happen to loose it
- 3 1/2 cups distilled white vinegar
- 1 1/4 cups white wine vinegar
- 5 tablespoons pickling salt
- 2 1/2 tablespoons pickling spices
- 8 lbs asparagus
- 2 lbs baby carrots
- 12 garlic cloves, peeled
- 6 dried chipotle chiles
Three Cheese and Bacon Macaroni and Cheese

Southwest Chicken Wraps

- 16 pieces frozen popcorn chicken
- 2 tablespoons prepared ranch salad dressing
- 2 tablespoons picante sauce
- 2 (10 inch) flour tortillas, warmed
- 1/4 cup shredded lettuce
- 1/4 cup chopped tomato
- 1/4 cup shredded Mexican cheese blend
Buffalo Chicken Wings

Fry the wings in hot oil until cooked through and crispy, about 12 to 15 minutes
- 12 chicken wings
- enough oil to fill your fryer to the appropriate level
- 1/2 cup (or so) of melted butter
- 1/2 cup (or so) of classic buffalo style hot sauce
Spicy Jalapeno Chicken Sausage with Mango, Pineapple Salsa

Heat a 12 inch skillet with olive oil over high heat
- 1 (12 ounce) package al fresco® Spicy Jalapeno chicken sausage, fully cooked, slice on the diagonal 1/4 inch thick
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons dry sherry
- 1 cup fresh mango, 1 inch chunks
- 1 cup fresh pineapple, 1 inch chunks
- 1 1/2 cups fresh salsa
- 1/2 cup prepared fresh/frozen edamame (soybeans)
- 1/2 cup canned black, unsalted soybeans, rinsed
- 3 cups cooked jasmine rice
- 1 tablespoon chopped fresh cilantro

In a shallow bowl, combine flour, paprika, salt, pepper, onion powder and garlic powder
- 1/3 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 2 eggs
- 2-1/4 pounds walleye, perch or pike fillets
- 1-1/2 cups mashed potato flakes
- 1/3 cup vegetable oil
- Tartar sauce and lemon wedges, optional

Directions Fill a Dutch oven halfway full with oil and heat to 350 degrees F
- Vegetable oil, for frying
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon kosher salt
- One 12-ounce bottle amber beer, such as Dos Equis
- 2 teaspoons hot sauce, such as Tabasco
- Two 6-ounce tilapia fillets, cut in half
- Kosher salt and freshly ground black pepper
- Lemon Tarragon Tartar Sauce, recipe follows
- 4 soft potato rolls, such as Martin's
- 1 head green leaf lettuce
- Lemon wedges, for serving
- 1 cup mayonnaise
- 2 tablespoons minced bread and butter pickles
- 2 tablespoons minced scallions
- 1 tablespoon capers, drained and coarsely chopped
- 1 tablespoon minced fresh tarragon
- 1 teaspoon stone ground mustard
- Zest of 1 lemon
- Juice of 1/2 lemon

- 1 chicken breast fillet
- 1 tablespoon vegetable oil
- 2 tablespoons minced red bell peppers

- 1/4 cup canned black beans, rinsed and drained
- 2 tablespoons frozen spinach, thawed and drained
