Crab Cake Mac N Cheese
By Booper-2
Bring a large pot of water to a boil over medium heat, then salt the water
- Salt
- 1 pound cavatappi or elbow pasta with lines on conchiglie (small fat tube/shell shaped pasta with lines)
- 2 tablespoons extra-virgin olive oil
- 6 tablespoons butter
- 3 ribs celery with leafy tops, finely chopped
- 1 medium onion, finely chopped
- 1/2 small red bell pepper, seeded and finely chopped
- 3 to 4 cloves garlic, finely chopped
- 1 bay leaf
- 2 About 2 tablespoons freshly chopped thyme leaves, several sprigs
- 1 About 1 tablespoon grated lemon zest
- Freshly ground black pepper
- 3/4 pound fresh lump crabmeat, picked for shells and flaked
- 1 tablespoon seafood seasoning (recommended: Old Bay)
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- Freshly grated nutmeg, to taste
- 1 tablespoon Dijon mustard
- 1/3 pound, about 1 rounded cup grated sharp white Cheddar
- 1/3 pound, about 1 rounded cup shredded Gruyere or Swiss cheese
- 3 tablespoons hot sauce (recommended: Frank's Red Hot)
- 1 cup panko bread crumbs
- A generous handful flat-leaf parsley, finely chopped
- 1/2 cup grated Parmigiano-Reggiano cheese, a couple of handfuls
Pickled Beets

Place beets in a large stockpot with water to cover
- 6 to 7 pounds fresh small beets
- 3 cups white vinegar
- 4 cups white sugar
- 1/2 pound onions sliced
- Makes 4 to 5 1 quart jars.

Asparagus Wrapped Wth Prosciutto

A Great Appetizer or side
- 1/4 lb prosciutto, 20 very thin slices
- 1 lb asparagus, about 20 roasted (you can use Roasted Asparagus With Garlic and Fresh Thyme, Roasted Asparagus With Lavender, Lemon and Garlic or your favorite)
- 1/4 lb cheese, 20 pieces (use your favorite used simi firm cow milk cheese with truffle)
Buffalo Cheese Fries

Heat oven to 450, line large baking sheet with parchment paper
- 1 1/2 bags frozen french fries (crinkle cut or steak)
- 1-2 tablespoons olive oil (or canola oil would work)
- 1 teaspoon garlic salt
- 1 teaspoon cayenne powder
- ground pepper to taste
- 1 cup buffalo wing sauce
- 1-2 tablespoons butter
- 1 1/2 cups sharp cheddar cheese, grated
- 1/2 cup blue cheese, crumbled
- 3 green onions, sliced
- 1 tablespoon chopped chives
Cheesy Scalloped Potatoes & Carrots

HEAT oven to 375°F. COOK vegetables in boiling water in large saucepan 8 to 10 min
- 2 lb. (900 g) Yukon gold potatoes (about 6), peeled, thinly sliced
- 4 carrots, cut diagonally into thin slices
- 2 onions, sliced, separated into rings
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1-1/2 cups milk
- 1-1/2 cups shredded Cracker Barrel Old Cheddar Cheese
Hot Bacon Dressing

Preparation Instructions Fry bacon until crisp
- 4 slices Bacon
- 1/2 cups Sugar
- 1/4 teaspoons Salt (optional)
- 1 Tablespoon Cornstarch
- 1 whole Egg Beaten
- 1/4 cups Vinegar
- 1 cup Water
- Fresh Spinach Leaves, Dandelion Greens, Or Endive; Washed Drained And Chilled

- 4 bacon strips, chopped

- 3/4 pound peeled and deveined cooked medium shrimp
Coca Cola Slow Cooker Pulled Beef

Preparation Place the roast in crockpot
- 3 to 4 lb. beef pot roast cut, such as a chuck roast, rump roast, or chuck arm
- 2 cups ketchup
- 1 pkg. Lipton onion soup mix
- 1 litre cola (regular, not diet) (Dr. Pepper will give it a more tangy taste)
Crack Tots

Directions: STEP 1: Pour the Tater Tots into a LARGE bowl and set it aside
- A 9×13 baking pan/dish..sprayed with non-stick spray
- 10 (or so) cups of frozen Tater Tots
- 2 cups of assorted shredded Cheese…divided! I used Mozzarella and a Colby Jack blend
- 1 can of any cream soup you like..I used Nacho Cheese
- 1 lb. Bacon..crispy (reserve the grease..optional)
- 1 lb. Sausage..fully cooked
- 1 Green Bell Pepper..chopped//you can totally add whatever veggies you prefer!
- 1 Onion..chopped..I didn’t use it, but I do recommend it!
- 1/2 cup Butter..softened…if needed!
- Sriracha…optional, but SO good with this
