Sticky Chicken

Preheat oven to 400*. Spray a 9x13 pan with cooking spray
- Sauce:
- 16 boneless, skinless chicken thighs (about 3lbs.)
- 1/2 C. barbecue sauce
- 1/4 C. soy sauce
- 1/4 C. red wine vinegar
- 1/4 C. liquid honey or maple syrup
- 1 TBS. chili powder
- 1 TBS. Dijon mustard
- 1 TBS. grated gingerroot
- 2 tsp. minced garlic
- 1 tsp. ground cumin
- 1 TBS. cornstarch

- 3 (3-ounce) packages blue gelatin, blueberry flavor
- 4 (3-ounce) packages red gelatin, cherry flavor
- 4 (1-ounce) packages unflavored gelatin
- 1 (14-ounce) can sweetened condensed milk (NOT evaporated milk)
- 4 cups vodka (plain or flavored*)
- Water (for gelatin prep)
- Pearls, tiny white candy (optional, for garnish)
- (optional, sparklers for garnish)
- Sprinkles red, white and blue or jimmies (optional, for garnish)
Simple Beef Stew

Bring meat, water and barbecue sauce to boil in Dutch oven or deep large skillet; cover
- 2 lbs. stew meat
- 2 C. water
- 3/4 C. barbecue sauce
- 1 1/2 lb. potatoes, cut into 1" chunks
- 6 carrots, peeled and cut into 1" slices
- 1 onion, coarsely chopped
- 1/4 C. A.1 thick N hearty steak sauce
Irish Cream Cheesecake

In a small bowl stir together crushed cookies and melted butter till well combined
- Crust:
- 1/4 C. crushed chocolate cookies
- 3 Tbs. butter
- Filling:
- 24 oz. cream cheese
- 3/4 C. sugar
- 2 1/2 Tbs. unsweetened cocoa powder
- 5 Tsp. cornstarch
- 4 eggs
- 1 egg yolk
- 3/4 C. Irish cream liqueur
- 1 Tsp. vanilla extract
- 2 Tsp. instant coffee
- 2 Tsp. hot water

- 2 lg Granny Smith apples, peeled and cored
- 2 cans crescent roll dough
- 1 C. butter
- 1 1/2 C. sugar
- 1 tsp. cinnamon
- 1 can Mt. Dew
Seafood Enchiladas

- 2 Tbs cooking oil
- 12- 6 inch corn tortillas
- 1/2 C sliced green onion
- 3 Tbs. butter
- 1/4 C flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 3/4 C. milk
- 1 C. shredded Monterey jack cheese
