Creamy Coleslaw With Bell Peppers & Red Onion

In a large bowl, toss together all vegetables and celery seed
- 3 (16 ounce) packages coleslaw mix
- 2 large carrots, grated
- 1 red and 1 yellow bell pepper, cut into slivers
- 1 medium red onion, cut in half and thinly sliced
- 1 1/2 teaspoons celery seeds
- 1 3/4 cups mayonnaise
- 6 tablespoons rice wine vinegar
- salt and pepper
New England Style Grilled Cheese

Slice cheese and apples into thin slices
- Sliced white bread with cranberries
- Extra-sharp or sharp white cheddar cheese, sliced thin (try Cabot)
- Apple, sliced thin (try granny smith)
Spaghetti Burgers

Make the fries: Brush a baking sheet with vegetable oil
- FOR THE FRIES:
- Vegetable oil, for frying and brushing
- Kosher salt
- 4 ounces spaghetti
- 1/4 cup grated parmesan cheese

- 1/2 small onion, cut into chunks
- 5 cloves garlic, smashed

Funnel Cake

- 3/4 stick butter (6 tablespoons)

Grilled Pico Burgers

Cut up the tomatoes and onions, chop the cilantro
- 1/4 c minced red onion
- 1/2 c minced red tomatoes
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp minced garlic
- 2 Tbsp hot sauce, I used Cholula chili lime hot sauce

For the zucchini taco shells: Preheat the oven to 450 degrees F
- 4 medium zucchini (about 1/2 pound each)
- Nonstick cooking spray, for spraying the parchment
- 2/3 cup grated Parmesan cheese (about 2 ounces)
- 1/2 cup thinly sliced scallions
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 2 eggs
- 3/4 cup quartered cherry tomatoes
- 2 teaspoons finely chopped fresh basil leaves
- 2 teaspoons finely chopped fresh mint leaves
- 1/4 teaspoon kosher salt
- 1/2 medium zucchini, finely chopped
- Juice of 1/2 lime
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1 shallot, finely chopped
- 1 serrano chile, seeds and ribs removed, finely chopped (about 2 teaspoons)
- 1 teaspoon kosher salt
- 1 to 2 ears corn, husked and kernels removed (about 1 1/2 cups kernels)
- 1/2 teaspoon ancho chile powder
- 1/2 teaspoon ground cumin
- One 15-ounce can refried beans, warmed
- 1/4 cup crumbled feta cheese
