Tomato, Avocado and Escarole Salad

In a large bowl combine the tomatoes, olives, mint and salt
- One 8-ounce container cherry tomatoes, halved
- 1/2 cup pitted castelvetrano olives, quartered
- 1/4 cup fresh mint leaves, chopped
- 1/2 teaspoon kosher salt
- 1 large head escarole, dark green leaves discarded, remaining leaves chopped into bite-size pieces
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon white balsamic vinegar
- 1 avocado, chilled and diced
- 1/2 cup toasted pine nuts
Bold Tastin' Grilled Steak

Mix together all 9 Beau Monde Seasoning spices and place in a small jar or zipper bag
- BEAU MONDE SEASONING:
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- 1 tsp ground allspice
- 1 tsp ground nutmeg
- 1 tsp ground black pepper
- 1 tsp ground white pepper
- 1 tsp ground bay leaves
- 1 tsp salt
- 1 1/2 tsp celery seed
- STEAK MARINADE:
- 1 c soy sauce
- 2 large onions, coarsely chopped
- 2 clove garlic, halved
- 1/4 c bottled gravy coloring (Kitchen Bouquet)
- 2 tsp Beau Monde seasoning
- steak (your choice)
Beer Brats

- ∙ 2 cups flour
- ∙ 1 cup sugar
- ∙ 1 1/2 teaspoons baking soda
- ∙ 4 level tablespoons cocoa
- ∙ 1 cup cold water

- ∙ 2 teaspoons vanilla
- FROSTING:
- ∙ 1 cup sugar
- ∙ 1/4 cup cocoa

- ∙ 1/4 cup milk
Grilled Jerk Shrimp & Pineapple Skewers

This is a quick marinade recipe, so it's perfect if you don't have a lot of time
- JERK MARINADE:
- 1 pound shrimp, peeled and deveined, 20-25 or 16-20
- 1/2 cup jerk marinade
- 2 slices pineapple, cut into 1/2 inch pieces
- 1 or more scotch bonnet peppers
- 2 cloves garlic
- 1 tablespoon ginger, grated
- 2 green onions
- 1 tablespoon thyme, chopped
- 1 tablespoon allspice
- 3/4 teaspoon nutmeg
- 3/4 teaspoon cinnamon
- 1 teaspoon pepper
- 1 tablespoon brown sugar
- 1 tablespoon oil
- 2 tablespoons white vinegar
- 2 tablespoons soy sauce
- 1 tablespoon dark rum
- 1/2 orange, juice and zest
- 1 lime, juice and zest
Sunny's Nunya Business Instant Rice and Pesto

In a pan over medium heat, add the olive oil, bell peppers, a pinch of salt and a few grinds of black pepper
- 1 tablespoon olive oil
- 1 red bell pepper, seeded and cut into small dice
- Kosher salt and freshly ground black pepper
- 4 cups prepared ready-to-eat instant rice, such as Uncle Ben's Ready Rice (from about three 8.5-ounce packages)
- 1/2 cup store-bought basil and pine nut pesto
- 1/4 cup pine nuts, toasted
Southwest Beef and Bell Pepper Skillet

BROWN meat in large ovenproof skillet
- 1 lb. extra-lean ground beef
- 1 can (14-1/2 oz.) fat-free reduced-sodium beef broth
- 1 can (10 oz.) diced tomatoes and green chiles, undrained
- 1 each large green and yellow pepper, cut lengthwise into thin strips, then crosswise in half
- 2 cups instant white rice, uncooked
- 1-1/2 cups KRAFT Shredded Colby & Monterey Jack Cheeses
Bobby Flay's Santa Fe Burger

Preheat the oven to 375 degrees F
- 1 large poblano chile
- 2 1/2 tablespoons canola oil
- Kosher salt and freshly ground black pepper
- 1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
- 4 hamburger buns, split; toasted, if desired (see below)
- 12 blue or yellow corn tortilla chips
- 1 tablespoon unsalted butter
