- 1 large onion, chopped (1 cup)
- 1 medium red sweet pepper, chopped (1⁄2 cup)
- 1 medium orange sweet pepper, chopped (1⁄2 cup)
- 1 medium green sweet pepper, chopped (1⁄2 cup)
- 2 cloves garlic, minced
- 4 cups lower-sodium beef broth
- 2 cups water
- 1 14.5-ounce can diced tomatoes, undrained
- 1 ⁄2 teaspoon black pepper
- 1 ⁄2 teaspoon chili powder
- 1 ⁄2 teaspoon smoked paprika
- 3 ⁄4 cup uncooked instant brown rice
- 1 ⁄2 cup finely shredded Colby and Monterey Jack cheese (2 ounces)
Brownie Pudding

Preheat the oven to 325 degrees F
- 1/2 pound (2 sticks) unsalted butter, plus extra for buttering the dish
- 4 extra-large eggs, at room temperature
- 2 cups sugar
- 3/4 cup good cocoa powder
- 1/2 cup all-purpose flour
- Seeds scraped from 1 vanilla bean
- 1 tablespoon framboise liqueur, optional
- Vanilla ice cream, for serving
Peach Galette

Makes 8 servings. Make the crust dough
- Crust:
- 1 1/4 cup flour
- 1 1/2 teaspoons sugar
- 1/2 teaspoon salt
- 4 oz (1/2 cup, 1 stick, 8 Tbsp) butter, cut into small (1/2-inch) cubes, chilled in freezer at least 15 minutes, preferably an hour
- 4 to 6 Tbsp ice water
- Filling:
- 2 large, not-overly-ripe yellow peaches (about 3/4 pound total), pitted, sliced into 1/4-inch to 1/2-inch slices
- 3 Tbsp sugar
- 1 Tbsp flour
- 1/2 teaspoon vanilla extract
- 1 Tbsp almond paste (optional)
- 1 teaspoon butter
- 1 egg
- A sprinkling of coarse sugar (optional)

- 1 1⁄2 cups mayonnaise
- 2 tablespoons cider vinegar
- 2 tablespoons sugar
- 1 tablespoon yellow mustard
- 1 teaspoon salt

- 1 ⁄2 teaspoon pepper
- 2 celery ribs, sliced
- 1 cup onion, minced
