Quick and Easy Baked Beans

Melt the butter in a saucepan and fry the bacon until almost cooked
- 2 tablespoons butter
- 6 slices bacon, diced
- 1 jalapeno, seeded and chopped
- 1 large onion, diced
- 1 large green bell pepper, diced
- 1 large red bell pepper, diced
- 1 large yellow bell pepper, diced
- Four 28-ounce cans baked beans, drained
- 1/2 cup mustard
- 1/4 cup barbecue sauce
- 1/4 cup ketchup
- Several dashes hot sauce
Basic Granola Recipe

Preheat the oven to 300 degrees F
- 3 cups rolled oats
- 2 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon (see Cook's Notes)
- 1/2 teaspoon kosher salt
- 1/3 cup honey (see Cook's Notes)
- 1/4 cup canola oil (see Cook's Notes)
- 1 teaspoon vanilla extract (see Cook's Notes)
- 1/2 cup coarsely chopped almonds (see Cook's Notes)

Chocolate Cake in a Mug

In a bowl, whisk together the flour, milk, sugar, cocoa, oil, salt and vanilla until fully combined
- 1/4 cup all-purpose flour
- 1/4 cup milk
- 1/4 cup sugar
- 2 tablespoons unsweetened cocoa powder

- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract

Linguine with Buttery Corn, Scallions, and Goat Cheese

Bring a large pot of salted water to a boil
- 12 oz. linguine
- kosher salt
- 4 tbsp. unsalted butter
- 1 bunch scallions, sliced, greens and whites separated
- 1 Black pepper
- 3 c. corn kernels (from about 3 ears)
- 1 tbsp. chopped fresh parsley, plus more for garnish
- 4 oz. soft goat cheese
Base Vinaigrette

- 1/4 cup red wine vinegar
- 1 teaspoon minced shallots
- 1/4 cup plus 2 tablespoons canola oil
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper

Tortellini with Peas and Prosciutto

- Kosher salt
- 1 pound meat-filled tortellini
- 2 tablespoons extra-virgin olive oil
- 4 ounces prosciutto or pancetta, finely chopped
- 3 cloves garlic, thinly sliced
- 1 tablespoon tomato paste
- 1/4 cup heavy cream
- 1 cup frozen peas, thawed
- 2 tablespoons chopped fresh parsley
- 1/2 cup grated parmesan cheese
Bacon Wrapped Jalapeno Popper Burgers

Grill the jalapenos over medium-high heat until charred all over, about 6-8 minutes
- 6 jalapeno peppers
- 4 ounces cream cheese, room temperature
- 1 1/2 pound ground beef
- salt and pepper to taste
- 8 strips bacon
- 4 slices cheddar cheese
- 4 hamburger buns
- 4 leaves lettuce
- 4 slices tomato
- 4 tablespoons mayonnaise or roasted jalapeno mayonnaise
Fried Green Tomatoes with Green Chile Mayonnaise

For the mayonnaise: Boil the corn in a small pot of salted water or microwave for 3 to 4 minutes
- MAYONNAISE: 1 ear corn
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 1 roasted poblano chile, fresh or canned, seeded Kosher salt and freshly ground pepper
- TOMATOES: 2 large green tomatoes (about 1 pound) Oil, for frying
- 2 cups panko breadcrumbs
- 1 teaspoon cayenne pepper Kosher salt
- All-purpose flour, for dredging
- 2 cups buttermilk 1 lime, cut in wedges
Caramel Twix Cookies

Preheat oven to 350 degrees F
- 1 1/2 cups butter, at room temperature
- 1 cup powdered sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- For the Caramel
- 15 ounces of caramel ( I used Kraft )
- 2 tablespoons evaporated milk
- For the Chocolate
- 1 1/2 cups milk chocolate chips
- 2 teaspoons shortening
