Split Hot Dogs with Butter-Toasted Buns and Homemade Toppings

For the honey mustard: Whisk together the mustard, honey and vinegar in a medium mixing bowl
- SWEET HONEY MUSTARD:
- 1/2 cup Dijon mustard
- 1/4 cup honey
- 2 teaspoons rice wine vinegar
- AVOCADO RELISH:
- 1 cup Mexican crema
- 1 teaspoon Sriracha
- 1 avocado, diced
- BUTTERMILK RANCH SLAW:
- 1/2 cup shredded carrots
- 1 tablespoon chopped fresh parsley
- 2 teaspoons chopped fresh dill
- 1/4 head green cabbage, thinly sliced
- 1/3 cup mayonnaise
- 1/4 cup buttermilk
- 1 1/2 teaspoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon onion powder
- Kosher salt and freshly ground black pepper
- HOTDOGS:
- 8 hot dogs
- 1 stick unsalted butter, melted
- 8 hot dog buns
Cobb & Rotini Pasta Salad

Toss all ingredients together with cooled pasta and serve with your favorite vinaigrette
- 1 box Rotini Pasta, cooked and cooled
- 2 boiled eggs, chopped
- 1/4 cup minced red onion
- 1 cup chopped cooked chicken
- 3 slices bacon, cooked and crumbled
- 1/2 avocado, chopped

- 1 egg
- 1 cup milk
- 1 cup all-purpose flour
- 1 1/2 teaspoons salt

- 1 1/4 c. self-rising flour
- 1 c. plain nonfat Greek yogurt
Mushroom Risotto

Cover the dried porcini mushrooms in the stock and let sit for 20-30 minutes
- 1 ounce dried porcini mushrooms
- 1 cup chicken stock (boiling)
- 2 tablespoons butter
- 1 onion (diced)
- 8 ounces mushrooms (sliced, I used a mix of cremini, shiitake and oyster)
- 2 cloves garlic (chopped)
- 1 teaspoon thyme (chopped)
- 1 cup arborio rice
- 1/2 cup white wine
- 1 cup chicken stock (or vegetable, warm)
- 1 tablespoon butter
- 1/2 cup parmigiano reggiano (grated)
- salt & pepper to taste
- 1/4 teaspoon truffle oil (optional)
- 1 handful parsley (optional)
Beef Bourguignon

Special equipment: 2 large pieces of cheesecloth and kitchen twine Preheat the oven to 300 degrees F
- 6 ounces applewood bacon, cut into 1/2-inch pieces
- 3 pounds beef chuck, cut into 1 1/2-inch cubes
- Salt and ground black pepper
- 3 tablespoons all-purpose flour
- 3 cups beef broth
- 1 large onion, peeled and coarsely chopped
- 2 carrots, unpeeled and coarsely chopped
- 1 head garlic, unpeeled cloves separated and lightly crushed
- 6 sprigs fresh thyme
- 2 dried bay leaves
- Pinch of whole black peppercorns
- 10 sprigs fresh flat-leaf parsley, cut in half, plus 3 tablespoons chopped, for garnish
