Bird's Nest Breakfast Cups

Preheat oven to 425 degrees F (220 degrees C)
- 1 (30 ounce) package frozen shredded hash brown potatoes, thawed
- 2 1/2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 1/2 tablespoons olive oil
- 2/3 cup shredded Cheddar cheese
- 12 eggs
- 2 tablespoons water
- 8 slices cooked bacon, crumbled - divided
- 1/4 cup shredded Cheddar cheese, divided
Tzatziki Sauce

Mix everything and let chill in the fridge for an hour
- 1/2 cup plain Greek yogurt
- 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
- 1 clove garlic, grated
- 1 tablespoon fresh dill, chopped
- 2 tablespoons lemon juice (~1/2 lemon)
- salt and pepper to taste

- 8 frenched chicken breasts
- 4 ripe peaches, cut in half and pitted
Broccoli Salad

Slow Cooker Glazed Bacon Wrapped Sausage Bites

- 3 large links of pre-cooked sausage such as Kielbasa or Mennonite sausage (~1 1/2 pounds)
- Raw Sliced bacon (~1/2 pack)
- 1 cup brown sugar
- 3 Tbsp grainy mustard

Apricot and Raspberry Granola Gratin with Raspberry Honey Yogurt

Special equipment: 2-quart gratin dish For the yogurt: In a small bowl, mix the yogurt and honey together
- 1 cup nonfat Greek yogurt
- 3 tablespoons raspberry honey
- 1 cup whole milk
- 4 eggs
- 1 cup all-purpose flour
- 4 tablespoons unsalted butter, melted, plus a few tablespoons softened butter for greasing
- 2 tablespoons light brown sugar
- 2 tablespoons pure cane sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- 8 ripe, slightly firm fresh apricots, halved, pitted and quartered
- 1 cup fresh raspberries
- 1 cup low fat granola, such as Kellogg's
- 1/2 cup sliced almonds
ORIENTAL COLESLAW

- 4 cups shredded cabbage or packaged coleslaw mix
- 1 pkg. Oriental Raman Noodles
- 1 cup toasted slivered Almonds
- 2 Tbls. toasted Sesame Seeds
- 6-8 cup sliced green onions
- 1/2 cup salad oil or light olive oil
- 1/2 cup sugar
- 1/2 cup cider vinegar
- 1 package of Oriental noodle seasoning that comes with the Raman Noodles
