EASY TAMALE PIE

Preheat oven to 400 degrees F
- CORNBREAD:
- 1 box of Jiffy Corn Muffin Mix (standard 8.5 oz box)
- 1/3 cup milk
- 1 egg
- 1 small can diced green chiles (4.5 ounce can)
- 1 can of corn or creamed corn
- MEAT:
- 1 lb ground beef
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- TAMALE PIE:
- 1 1/4 cup enchilada sauce
- 2 cups of shredded cheese (I used sharp white cheddar)
- OPTIONAL TOPPINGS:
- Salsa
- Guacomole
- Sour Cream
- Shredded Cheese
- Cilantro
- Lime wedges
Panda Express Copycat Fried Rice

This is a copycat version of Panda Express Fried Rice
- 1 cup long grain rice, uncooked (or 2 cups leftover cooked rice)
- 2 cups water
- 2 eggs, beaten
- 3 tablespoons butter, divided use
- 1 cup frozen peas and carrot, thawed
- 1/4 cup white onion, diced
- 2 tablespoons soy sauce
- 1/4 teaspoon sesame oil (or more to taste)
- 1/8 teaspoon white pepper, ground
- 1/8 teaspoon table salt (or to taste)
- 1 green onion, diced (including green tops)
Thai Beef with Peppers

Cook the noodles according to the package directions
- 1 package pad Thai rice noodles or linguine
- 1/2 cup low-sodium soy sauce
- 3 tablespoons sherry
- 2 tablespoons cornstarch
- 2 tablespoons packed brown sugar
- 1 tablespoon minced fresh ginger
- 1 teaspoon red chili paste or a few dashes red chili oil
- 2 cloves garlic, minced
- 1 lime, halved
- 1 pound flank steak, sliced very thin against the grain
- 2 tablespoons vegetable oil
- 1 medium yellow onion, sliced
- 1 red bell pepper, cored and sliced into rings
- 1 tablespoon diced fresh jalapeno or 1 teaspoon diced hot pepper
- Fresh basil leaves, for garnish
- Fresh cilantro leaves, for garnish
Strawberry Daiquiri Cake

Preheat oven tp 350°. Grease & flour a bundt type cake pan
- 1 box white cake mix
- 1 box (3.4 oz) vanilla instant pudding
- 1 can(s) frozen strawberry daiquiri mix (thawed)
- 4 eggs
- 1 stick butter (softened)
- 1/4 c strawberry puree (made from frozen sliced strawberries in sugar, pureed in blender)
- GLAZE
- 1 1/2-2 c powdered sugar (sifted)
- 1 Tbsp butter (melted)
- 2 Tbsp (or more depending on desired thickness) strawberry puree
Cherry Krispie Treats with Dark Chocolate

1.In large saucepan, melt butter with gelatin powder and marshmallows on low heat
- 6 Tbsp butter
- 1 1/2 Tbsp cherry gelatin powder
- 16 oz pkg mini marshmallows
- 8 cup Rice Krispies
- 11 oz dark chocolate, melted
Cowboy Chopped Salad

For the bacon and tortilla strips: Fry the bacon in a medium skillet over medium heat until crisp, about 8 minutes
- 12 slices bacon, chopped
- Vegetable oil, for frying
- 4 corn tortillas, cut into strips
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup barbecue sauce
- 1/4 cup chopped fresh flat-leaf parsley
- 2 tablespoons chopped chives
- 1 clove garlic, finely chopped
- Buttermilk, as needed to adjust the consistency
- Hot sauce, as needed
- Kosher salt
- 1 head iceberg lettuce, cut into chunks and sliced
- 1 pint grape tomatoes, halved
- 1 bunch scallions, sliced
- 1 pound Cheddar, grated
- Pico de gallo, store-bought or homemade, recipe follows, for topping
- 12 Roma tomatoes (slightly under ripe is fine)
- 3 yellow or red onions
- 2 cups fresh cilantro leaves
- 1 to 2 jalapenos, plus more if needed
- 1 lime
- Salt
Pumpkin Cheesecake Fries

In a medium bowl, whisk together pumpkin pie filling and cream cheese until smooth
- 1/3 c. pumpkin pie filling
- 1/3 c. cream cheese, softened
- 12 slices soft white bread, crusts removed
- 6 tbsp. butter
- 1 c. cinnamon sugar
- Caramel sauce, warmed (for serving)
Cin-ful Peach Cobbler

- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 10 cups frozen peaches, thawed, about 3 pounds prepared
- 1 teaspoon cornstarch, dissolved in 1 tablespoon water
- 1 lemon, juiced
- 1 teaspoon butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 3/4 cup all-purpose flour
- 3/4 cup oats
- 1/4 cup slivered almonds
- 1/2 cup dried cranberries
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 stick unsalted butter, room temperature, cut into 8 pieces
- Vanilla ice cream or whipped cream, for serving
- Special Equipment: 12 by 8-inch oval stoneware dish or 13 by 9-inch rectangular glass or stoneware dish
Red Beans & Rice

Prepare the beans the night before
- 1 lb small dried red beans
- 3 quarts water
- 1 cup dry red wine
- 3 large onions, chopped
- 1 tablespoon minced garlic
- 1 ⁄2 cup chopped fresh parsley
- 1 ⁄2 cup chopped green onion
- 1 ⁄2 teaspoon crushed dried mint
- 1 ⁄4 cup oil or 1⁄4 cup bacon drippings
- 1 ⁄2 lb ham bone, and scraps
- 8 -10 cups meat stock
- 1 teaspoon salt (to taste)
- 1 teaspoon louisiana hot sauce (to taste- I like lots) or 1 teaspoon cayenne pepper (to taste- I like lots)
Spaghetti Pie

Special equipment: a 9-by-3-inch cake pan Preheat the oven to 350 degrees F
- Nonstick cooking spray, for greasing the pan
- Kosher salt and freshly ground black pepper
- 1 pound spaghetti
- 1 pound ground beef (85 percent lean)
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cups marinara sauce, homemade or store-bought (I like Rao's)
- 1/2 cup whole-milk ricotta cheese
- 2 tablespoons minced fresh flat-leaf parsley
- 3 large eggs
- 1/2 cup plus 2 tablespoons grated Parmesan
- 1 cup shredded mozzarella
