1.Preheat oven to 400 degrees F
- 1 1.5lb bag Blushing Belles from The Little Potato Company
- 2 tbsp canola oil
- Salt
- 6 slices bacon, chopped
- 1/2 medium onion, chopped
- 1/4 cup apple cider vinegar
- 1/4 cup pure maple syrup
- 1/4 tsp (or about 1 clove) garlic, minced
- 1/2 tsp fresh thyme, removed from stem and chopped
Spinach and Artichoke Baked Whole Grain Pasta

Position the oven rack in center of the oven
- 2 (10-ounce) boxes frozen spinach
- Salt
- 1 pound penne pasta or macaroni (any short cut pasta)
- 2 tablespoons extra-virgin olive oil
- 1 large shallot, chopped
- 4 cloves garlic, finely chopped or grated
- 1 (10-ounce) box frozen artichoke hearts, defrosted, halved, pat dry
- 1/2 cup dry white wine
- 4 tablespoons butter
- 3 slightly rounded tablespoons flour
- 2 cups milk
- Freshly ground black pepper
- Freshly grated nutmeg
- 5 ounces Gruyere cheese, shredded (about 1 1/2 cups)
- 1 cup shredded Parmigiano-Reggiano cheese

Neapolitan Ice Cream Sandwich Cake

- 3/4 pound ground beef
- 1 link fresh chorizo (3 to 4 ounces), casing removed
- 1 large egg
- 1/4 cup fine yellow cornmeal
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon granulated onion
- Kosher salt and freshly ground black pepper
- 2 cups corn tortilla chips
- 2 ounces Cheddar, cut into 30 cubes just under 1/2 inch thick
