Peppy Pimento Grilled Cheese

Shred your cheese Note: keep it cold, so work fast, so it won't gum up
- 8 ounces freshly shredded sharp cheddar cheese
- 8 ounces freshly shredded pepper jack cheese
- 4 ounces pimentos
- 2 tablespoons chopped jalapenos
- 1/4 cup crumbled feta cheese
- 1/4 cup cottage cheese
- 1/4 cup mayonnaise
- 2 teaspoons fresh cracked black pepper
- 1 teaspoon garlic salt
- 2 pieces multigrain bread per person
- olive oil or butter for both side of bread
- 2 tablespoons fire roasted salsa
Barbecued Apricot Hot Dogs

Combine all ingredients except hot dogs in a slow cooker
- 1 cup apricot preserves
- 4 ounces tomato sauce
- 1 ⁄3 cup vinegar
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon oil
- 1 teaspoon salt
- 1 ⁄4 teaspoon ground ginger
- 2 lbs hot dogs, cut into 1 inch pieces
Banana Upside-Down Sour Cream Walnut Cake

Heat oven to 350°F. Spray 10-cup tube pan or 12-cup fluted tube pan with cooking spray
- 3 eggs
- 1 pkg. (2-layer size) yellow cake mix
- 1 cup Sour Cream
- 1/3 cup oil
- 1/4 cup water
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1/2 cup butter or margarine
- 1/2 cup packed brown sugar
- 2 bananas, sliced
- 1/2 cup chopped PLANTERS Walnuts, toasted
Lemon Striped Delight

Reserve 24 wafers. Finely crush remaining wafers; place in medium bowl
- 1 pkg. (11 oz.) vanilla wafers, divided
- 6 Tbsp. butter, melted
- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 1/4 cup sugar
- 2 Tbsp. cold milk
- 1 tub (12 oz.) COOL WHIP Whipped Topping, thawed, divided

In the container of a blender, combine the mixed berries, strawberry yogurt, banana, milk and sugar
- 2 cups frozen mixed berries
- 1 cup strawberry flavored yogurt
- 1 banana, sliced
- 1 cup milk
- 1/2 teaspoon white sugar (optional)
Okanagan Apple Muffins

Preheat oven to 325 degrees
- 1/2 cup brown sugar, firmly packed
- 6 tablespoons flour c
- 1/4 cup butter, unsalted
- 1 teaspoon cinnamon
- 1 1/2 cups brown sugar, firmly packed
- 2/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla
- 1 cup water
- 2 teaspoons apple cider vinegar
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups peeled apples, diced into 1/2 inch chunks
BLACK BEAN SWEET POTATO BURRITOS

Mix corn and beans with next 7 ingredients
- 1 can sweet potatoes (drain half the water and mash with a mixer)
- (I also add the same spices that are in the black beans to the sweet potatoes.)
- Shredded cheddar cheese
- 3/4 bag frozen corm or 1 can corn (thawed - drained)
- 1 can black beans, rinsed and drained
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1 teaspoon minced garlic
- 1 teaspoon yellow mustard
- 1/4 cup diced white onion
- 1/2 teaspoon cayenne pepper
- salt to taste
