Easy Kickin' Queso

Place all ingredients in a crock pot or on the stove top on low until cheese is melted
- 2 lbs velveeta queso blanco with jalapenos
- 1 (8 ounce) can water chestnuts, drained and chopped
- 1 (10 ounce) box frozen chopped spinach, thawed and squeezed
- 1 (10 ounce) can Rotel Tomatoes, drained
Cucumber and Tomato Salad with Best Ever Italian Vinaigrette

This super easy cucumber and tomato salad will add a refreshing taste your day
- For the Italian Vinaigrette:
- 2 cucumbers, peeled, seeded and chopped
- 4 vine-ripened tomatoes, seeded and chopped
- 1/2 cup loosely packed fresh basil, chopped
- 1 cup neutral-tasting oil like avocado, grapeseed or canola
- 1/4 cup white wine vinegar
- 2 tablespoons apple cider vinager
- 2 teaspoons Dijon mustard
- 1 teaspoon dried minced onions OR 2 Tablespoons minced shallot
- 1 clove garlic, pressed or minced
- 1 teaspoon honey
- 1 teaspoon salt
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon dried oregano
- pepper, to taste
Farmers' Casserole

Spray or grease a 9 x13 or 3qt baking dish with non stick cooking spray
- 6 cups shredded frozen hash browns
- 1 1/2 shredded cheddar cheese (or you preferred flavored)
- 2 cups diced ham or bacon
- 1/2 cup diced green onion (optional)
- 8 eggs, beaten
- 2-12oz cans evaporated milk
- salt/pepper- to taste preference.
Roasted Tomatillo Salsa

Preheat the oven to 450 degrees F
- 2 pounds fresh tomatillos, husked and well rinsed
- 2 fresh jalapeno peppers
- 1 medium white onion, quartered
- 4 tablespoons olive oil
- 4 cloves garlic, unpeeled
- 1/2 cup loosely packed fresh cilantro leaves
- Juice of 1/2 lime
- Kosher salt
Crock Pot Bananas Foster

1. Combine brown sugar, cinnamon and butter in crock pot 2
- 1 cup packed brown sugar
- 1/4 tsp ground cinnamon
- 1/2 cup unsalted butter, cut into pieces
- 4 ripe bananas, cut into 1 inch slices
- 1/4 cup dark rum
Greek Bruschetta

Cut tomatoes and cucumbers and take out the seeds
- 2 cups cucumbers
- 2 red bell pepper
- 2 tomatoes seeded and chopped
- 2 green onions chopped
- 1 jar kalamata olives chopped
- 2 small packages of crumbled feta cheeses
- 2 loaves of Italian bread, sliced and toasted
- one half bottle of Italian dressing, Wish-Bone
Sausage Pizza Cones

Special equipment: heavy-duty aluminum foil Preheat the oven to 375 degrees F
- 6 sugar ice cream cones
- Nonstick cooking spray
- Six 6-inch soft flour tortillas
- 2 tablespoons plus 2 teaspoons olive oil
- 4 tablespoons finely grated Parmesan
- 8 ounces sweet Italian sausage, casings removed
- 4 to 5 drained and diced jarred roasted bell peppers (about 4 ounces)
