Fra Diavolo Sauce with Linguine

Heat crushed garlic and 2 tablespoons olive oil in a large saucepan over medium heat until garlic starts to sizzle
- 6 cloves garlic, crushed
- 1/4 cup olive oil, divided
- 6 cups canned whole tomatoes with juice, chopped
- 2 teaspoons red pepper flakes
- 2 teaspoons chopped fresh oregano
- 2 teaspoons chopped fresh basil
- 1 1/2 teaspoons salt
- 1 (16 ounce) package linguine
- 1/2 pound small shrimp, peeled and deveined
- 1/2 pound bay scallops
- 1 tablespoon chopped fresh parsley
Jalapeno Cheese Fritters

Breading Station: In a 1/2 size foil pan place flour
- Breading:
- 1 (8-oz.) package cream cheese, softened
- 24 oz. Cheddar Cheese, shredded
- 24 oz. Monterrey Cheese, shredded
- 8 oz. Jalapenos, deseeded and finely chopped
- 1 teaspoon Lawry’s seasoning
- 1/4 cup all purpose flour
- 1.5 quarts bread crumbs
- Egg Wash:
- 4 eggs
- 1 cup water
Strawberry Daiquiri Drunkcups

Pre-heat oven as directed on box
- 1 box strawberry cake mix
- 1 bag of frozen strawberries
- 1 cup strawberry daiquiri mixer
- 1/4 cup rum
- 1-3 eggs (depending on what the box calls for)
- 1/4-1/2 cup oil or butter (depending on what the box calls for)
- FOR THE ICING
- 6-8 cups powder sugar
- 1 3/4 sticks unsalted butter, softened
- 1/4 cup rum
- 1/4 cup daiquiri mix
PIE CRUST DESSERT NACHOS

Heat oven to 350°F. Spray cookie sheet with cooking spray
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
- 1 box Pillsbury® refrigerated pie crusts, softened as directed on box
- 1/3 cup hot fudge sundae syrup
- 1/3 cup caramel sundae syrup
- 1/2 cup chopped nuts
Homemade Berry Granola Parfaits

For the granola: Preheat the oven to 350 degrees F
- 2 cups old-fashioned rolled oats
- 1 1/2 cups whole almonds
- 3/4 cup shredded coconut
- 1/4 cup vegetable oil
- 1/2 cup honey
- Salt
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup dried pineapple chunks
- 1/2 cup maple syrup
- 4 cups plain yogurt
- 4 cups mixed berries ( raspberries, blueberries and strawberries), quartered
SPINACH MANDARIN POPPY SEED SALAD

Combine all salad ingredients in a large bowl and refrigerate until ready to serve
- Salad:
- 8 oz (1/2 bag) of baby spinach
- 1/2 head Romaine lettuce, chopped
- 1/2 red onion, thinly sliced
- 1 avocado, cubed
- 1 cup shredded mozzarella cheese
- 1 (12 oz) package bacon, cooked and crumbled
- 1 large can Mandarin oranges, drained
- Poppy Seed Dressing:
- 1/3 cup white vinegar
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 cup granulated sugar
- 1 tsp mustard
- 1 green onion
- 1/2 cup vegetable oil

EZ Frito Pie in a Bag

- 6 (1 1/4 ounce) bags Fritos corn chips
- 4 1⁄2 cups chili, prepared
- 3 cups shredded cheddar cheese
- 3 cups lettuce, shredded
- 12 tablespoons tomatoes, diced
- 6 plastic spoons
- 6 tablespoons sour cream (optional)
- 6 tablespoons onions, finely minced (optional)

Angel Hair Pasta with Pesto

- Leaves from 2 bunch fresh basil
- 2 tablespoons pine nuts, untoasted
- 1 garlic clove
- 1/2 cup extra-virgin olive oil
- 1/2 cup freshly grated Parmigiano-Reggiano
- Salt and freshly ground black pepper
- 1 pound angel hair pasta
