Cherry Clafoutis

Preheat the oven to 375 degrees F
- 2 tablespoons unsalted butter, thinly sliced, plus more for the dish
- 1 pound (2 cups) fresh cherries, pitted (or one 10-ounce bag frozen cherries, thawed and patted dry)
- 3 large eggs
- 1 1/4 cups half-and-half
- 1/2 cup 4% cottage cheese
- 1/2 cup plus 2 tablespoons granulated sugar
- 1/2 cup all-purpose flour
- Confectioners' sugar, for dusting
Italian Tortellini Salad

1.Cook tortellini according to the package, drain well and transfer into a large mixing bowl
- Salad:
- 1 lb 4 oz three cheese tortellini
- 10 oz cherry tomatoes, cut in half
- 2/3 cup banana peppers, chopped
- 1/4 lb capicola ham, chopped
- 1/4 lb pepperoni, chopped
- 1/3 lb hard salami, chipped
- 8 oz fresh mozzarella cheese, chopped
- 2 Tbsp minced Italian parsley
- 6-8 basil leaves, minced
- Salt
- Dressing:
- 1/2 cup virgin olive oil
- 2 Tbsp white balsamic vinegar (white wine vinegar can be substituted)
- 1 Tbsp fresh lemon juice
- 3 garlic cloves, pressed
- Salt
- 1/4 (or 1/2 is desired) tsp crushed red pepper flakes
- 2 tsp dry herb de provence

Pina Colada Poke Cake

Prepare and bake cake in a 9x13 pan according to package directions
- For the cake:
- 1 box butter cake mix, plus ingredients to make cake
- 1 14-ounce can sweetened condensed milk
- 1 15-ounce can cream of coconut (NOT coconut milk) - this can usually be found in the drinks/mixers aisle of your local grocery store
- 1 15.25-ounce can crushed pineapple, drained and juice reserved
- For the topping:
- 2 cups heavy whipping cream
- 2 to 4 tablespoons powdered sugar (sweeten to your preference)
- 1 teaspoon coconut extract

- 2 1/4 c quick cooking oatmeal
- 1 1/2 large granny smith apple, peeled and diced small (eat other 1/2 or use 2 medium)
- 1 bag(s) cinnamon chips, 10 oz.
- 1 1/2 c chopped walnuts
