- 2 teaspoons ketchup
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon seasoned salt

Mango Crisps with raspberries & almonds

Preheat oven to 350 F; line a baking sheet with aluminum foil
- 1 lb. frozen mango,diced into l" cubes (3 cups)
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- Juice of 1/2 a lime
- Pinch of salt
- 1/3 cup rolled oats, processed to a powder
- 1/4 cup sugar
- 3 tablespoon all-purpose flour
- 3 tablespoon unsalted butter, cold, cubed
- 1/4 cup sliced almonds
- 1 teaspoon almond extract
- Half an egg white
- 1/2 cup frozen raspberries

- . 1 pound beet greens
- . 1 strip of thick cut bacon, chopped (or a tablespoon of bacon

- . 1/4 cup chopped onion
- . 1 large garlic clove, minced
- . 3/4 cup of water
- . 1 Tbsp granulated sugar
- . 1/4 teaspoon crushed red pepper flakes
- . 1/6 cup of cider vinegar
Poached Pear Salad with Pear Vinaegrette

FOR THE SALAD: To assemble salad, wash lettuce well and drain until very dry
- For the Salad:
- 1 head Boston lettuce
- 3/4-cup pear vinaigrette, recipe follows
- 4 Ounces bleu Cheese, Crumbled
- 1/2 cup pecans, lightly toasted
- 2 poached pears, recipe follows, halved and cored
- For the Poached Pears:
- 4 Bosc pears
- 1 cup white wine
- 2 cups water
- 2 tablespoons sugar
- 1/2 vanilla bean, split
- 2 whole star anise
- 1 lemon peel
- 1 orange peel
- 1 small cinnamon stick
- Pear Vinaigrette
- 2 poached pears, pureed (from above)
- 1/4 cup walnut oil
- 1/4 cup red wine vinegar
- 1/4 cup poaching liquid from the poached pears
- Salt and freshly ground black pepper, to taste
Orange Honey Sauce

Mix all ingredients together in sauce pan bring to a boil and cook 2 minutes
- 1 onion finely chopped
- 1 tablespoon oil
- 1 cup orange juice
- 4 tablespoons honey
- 1 tablespoon finely chopped fresh ginger
- 2 tablespoons wine vinegar
- few drops of Tabasco sauce

- 2 cups Braeburn or Granny Smith apple, peeled, diced
- 1 cup golden raisins
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh sage
- 1 tablespoon fresh thyme leaves
- Salt and pepper

- Additional salt and freshly ground black pepper to taste
