Fajita Seasoning Mix

Rather than buying fajita seasoning, it's easy to make your own
- 1 tablespoon cornstarch
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon sugar
- 3/4 teaspoon crushed chicken bouillon cube
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon cumin
Baked Haddock

Terrific basic recipe for Baked Haddock! Serve with a side salad, or some french fries for a complete meal
- 3/4 cup milk
- 2 teaspoons salt
- 3/4 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon ground dried thyme
- 4 haddock fillets
- 1/4 cup butter, melted
Walnut Honey Cream Cheese Spread

Blend all together. Chill
- 8 tablespoons ground walnuts
- 4 tablespoons honey
- 8 ounces cream cheese
Crockpot Potatoes

- per person:
- 1 large baking potato
- 1/2 Tablespoon butter or olive oil
- kosher salt
- 10 inch square of aluminum foil
Easy Tuna Noodle Casserole

Instructions: 1. In a large stock pot, cook the pasta or egg noodles according to package instructions
- 8 ounces pasta or 12 ounces egg noodles
- 2 6-ounce cans of tuna, drained
- 1 onion, chopped
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- dash of pepper
- 1 1/2 cups (6 ounces) shredded mozzarella cheese
- 1 1/2 to 2 cups shredded cheddar cheese
Oven Scrambled Eggs

Preheat the oven to 350 degrees F (175 degrees C)
- 1/4 cup butter or margarine, melted
- 12 eggs
- 1 teaspoon salt
- 1-1/4 cups milk
Glorious Carrot Muffins

Fresh ginger adds a tangy twist to these sweet and chewy carrot muffins
- 1 cup whole-wheat flour
- 1/4 cup ground flaxseed or wheat germ
- 1/4 cup rolled oats
- 1 teaspoon baking soda
- 3/4 cup walnuts, chopped
- 2/3 cup golden raisins
- 1 cup white grape juice concentrate
- 2 large eggs, lightly beaten
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 2 teaspoons fresh ginger, peeled and minced
- 1 cup carrots, grated
Brown Bag Burritos

Brown ground beef with onions
- 2 pounds ground beef
- 2 cans refried beans
- 2 cans enchilada sauce
- 1/2 cup water
- 1/3 cup diced onion (you can also use dried or minced onion)
- 1 taco seasoning packet (or 1 Tablespoon chili powder, 1 Tablespoon garlic powder, and 1 teaspoon salt. I used the taco seasoning packet instead because that’s what I already had on hand and I didn’t have any chili powder on hand.)
- 1 teaspoon dried oregano
- 3 cups shredded cheddar cheese
- 20 burrito-sized flour tortillas
Classic Egg Salad

Place eggs in medium saucepan and cover with water
- 3 large eggs
- 2 Tbsp plain yogurt
- 1 Tbsp mayonnaise
- 1 tsp fresh lemon juice
- 1/2 tsp Dijon mustard
- 1/2 cup quartered cherry tomatoes
- 1/2 celery stalk, minced (about 1/4 cup)
- 1 Tbsp minced red onion
- 2 tsp chopped fresh dill, if desired
- Salt and pepper
Quinoa Side Dish

Melt butter in a saucepan over medium heat
- 1 tablespoon butter
- 1 cup uncooked quinoa
- 2 cups vegetable broth
- 2 teaspoons chopped garlic
- 2 tablespoons chopped fresh parsley
- 1/2 tablespoon chopped fresh thyme
- 1/4 teaspoon salt
- 1 small onion, finely chopped
- 1 dash fresh lemon juice (optional)
