Chicken Piccata

Season chicken with salt and pepper
- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt and freshly ground black pepper
- All-purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped
Easy Scalloped Potatoes

Instructions Preheat oven to 350 degree F and grease a 13"x9" baking pan with cooking spray
- 2 pounds russet potatoes
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 1/2 cups nonfat milk or half & half
- Salt & pepper
- 8 ounces (about 2 cups) freshly shredded cheddar cheese + 1/4 cup for topping
- Paprika, for garnish
- Fresh chopped chives or parsley, for garnish
Chicken Stew with Lemon and Rosemary

Preheat the oven to 425 degrees F
- 8 chicken thighs, roughly 2 1/2 pounds (each thigh about 6 ounces)
- Kosher salt, plus 1 teaspoon
- Freshly ground black pepper
- 1 tablespoons vegetable oil
- 3 tablespoons unsalted butter, softened
- 4 carrots, sliced into 1-inch bias cut (about 1 1/2 cups)
- 4 celery ribs, cut into 1-inch bias cut (about 1 1/2 cups)
- 2 sprigs rosemary
- 1 lemon, juiced
- 2 1/2 cups chicken broth, homemade or low-sodium canned
- 3/4 cup frozen pearl onions, thawed
- 2 teaspoons finely grated lemon zest
- 2 tablespoons all-purpose flour
- Buttered noodles, accompaniment
Basic Rub for Basically Fantastic Beef Brisket

- 2 dozen corn tortillas
- 28-ounce can Las Palmas red enchilada sauce
- 4 cups grated jack and/or cheddar cheeses

Impossibly Easy Breakfast Bake (Crowd Size)

1 Heat oven to 400°F. Grease rectangular baking dish, 13x9x2 inches
- 2 packages (12 oz each) bulk pork sausage
- 1 medium bell pepper, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 3 cups frozen hash brown potatoes
- 2 cups shredded Cheddar cheese (8 oz)
- 1 cup Original Bisquick® mix
- 2 cups milk
- 1/4 teaspoon pepper
- 4 eggs
Spinach Artichoke Dip

Instructions Mix all ingredients together, except mozzarella
- 1-14 oz can artichoke hearts, drained and coarsely chopped
- 1/2 cup chopped spinach*, drained and chopped
- 1-8 oz. package light cream cheese, room temperature
- 1/2 cup mayonnaise
- 1/2 cup shredded Parmesan cheese**
- 1 clove garlic, minced
- 1/2 tsp dried basil
- 1/4 tsp garlic salt
- 1/4 cup shredded mozzarella
- I buy the frozen boxed package at the grocery store - drained and packed it equals half a cup
- I prefer fresh, shredded Parmesan, but have also used the green can grated kind and it works fine.
Outback Steakhouse Walkabout Onion Soup

This is a nice delightful soup that is easy to prepare
- WHITE SAUCE:
- 2 cups yellow sweet onions, thinly sliced
- 2 tablespoons butter
- 1 (15 ounce) can chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon fresh pepper, ground
- 2 chicken bouillon cubes
- 1/4 cup Velveeta cheese, cubes, diced (compressed in measuring cup)
- 1 1/2 to 1 3/4 cups white sauce (below)
- Cheddar cheese, shredded for garnish
- 3 tablespoons butter
- 3 tablespoons flour
- 1/4 teaspoon salt
- 1 1/2 cups whole milk
Slow Cooker Baked Potato Soup

- 2 (10 3/4 ounce) cans condensed cream of chicken soup
- 1 (10 3/4 ounce) can condensed cream of celery soup
- 2 cups half & half
- 6 Tbsp melted butter
- 4 medium russet potatoes peeled and diced into 1 inch cubes
- 1 1/2 cups grated cheddar cheese
- 1 bunch green onions thinly sliced
- 4 slices of bacon, cooked and crumbled
