Umami Girl’s Vegetarian Mushroom Stuffing

- 2 medium onions, diced
- 3 stalks celery, with leaves, diced
- 1 teaspoon salt, divided
- 1/8 teaspoon pepper
- 8 ounces shiitake mushrooms, stems removed, caps halved if large and sliced
- 8 ounces cremini mushrooms, halved if large and sliced
- 4 cloves garlic, chopped
- 1 Tablespoon minced fresh thyme
- 2 Tablespoons minced fresh sage
- 1 cup dry white wine
- 3 large eggs
- 2 1/2 cups vegetable stock
- 1/4 cup minced flat-leaf parsley
Roasted Mushrooms Stuffed With Feta, Spinach & Bacon

Rich and decadent, these are a surefire way to please a crowd
- 8 ounces bacon slices
- 1 cup onions, chopped
- 1 (10-ounce) package frozen spinach, chopped, thawed, squeezed dry
- 4 ounces feta cheese, crumbled (about 3/4 cup)
- 4 ounces cream cheese, room temperature
- 1/4 teaspoon dried crushed red pepper
- 2 3/4 pounds button mushrooms (about 48; each about 1 1/2 inches in diameter), stemmed
Nanaimo Bars

Bottom Layer Melt first 3 ingredients in top of double boiler
- Bottom Layer
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup sugar
- 5 tbsp. cocoa powder
- 1 egg, beaten
- 1 1/4 cups graham cracker crumbs
- 1/2 c. finely chopped almonds
- 1 cup coconut
- 1/2 c. Heath toffee bits (optional)
- Middle Layer
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 2 Tbsp. and 2 Tsp. half-and-half
- 2 Tbsp. vanilla custard powder or powdered vanilla pudding mix
- 2 cups powdered sugar
- Top Layer
- 4 squares semi-sweet chocolate (1 oz. each)
- 2 Tbsp. unsalted butter
Dorie Greenspan's Tartest Lemon Tart

Getting Ready: Center a rack in the oven and preheat the oven to 325 degrees F
- 1 1/2 lemons, scrubbed and dried
- 1 1/2 cups sugar
- 1 large egg, room temperature
- 2 lare egg yolks, room temp
- 1 1/2 tbsp cornstarch
- 1/2 c. heavy cream
- 1/2 stick unsalted butter, melted and cooled
- 1 9-inch tart shell made with Dorie's Sweet Tart Dough with Nuts, partially baked and cooled
- Whipped cream, creme fraiche or confectioners' sugar for garnish

- 1/3 cup whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp. sea salt
- 1 egg yolk
- 1 tablespoon extra virgin olive oil
- 3/4 cup water

Variations: Sweet Tart Dough With Nuts-- This dough has a slightly more assertive flavor than Sweet Tart Doug...
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioner's sugar (powdered sugar)
- 1/4 tsp. salt
- 1 stick plus 1 tablespoon (9 tablespoons) very cold (or frozen) unsalted butter, cut into small pieces
- 1 large egg yolk
- zest of a lemon (my own addition)
Sugar snap pea and ham risotto

Bring broth to a simmer in a medium saucepan (do not boil)
- 4 1/2 cups fat-free, less-sodium chicken broth
- 8 ounces sugar snap peas, trimmed and cut into 1-inch pieces
- 2 teaspoons olive oil
- 1 1/2 cups thinly sliced leek (about 2 medium leeks)
- 2 garlic cloves, minced
- 1 cup uncooked Arborio rice or other medium-grain rice
- 3 ounces diced cooked ham (about 3/4 cup)
- 1/2 cup freshly grated Parmesan cheese
- 1/8 teaspoon black pepper
Peanut Butter Crunch Snack Balls

Mix all but last two ingredients and mix until well combined
- 2 cups honey
- 6 cups peanut butter (creamy or crunchy)
- 3 cups rice krispies
- 11/2 cups grape nuts
- 3/4 cup applesauce
- 2 cups coconut
- 3 cups crushed cereal (I used honey nut cheerios and Life cereal since I had it on hand)
- 11/2 cups chocolate or butterscotch chips - or substitute dried fruit, like raisins
- 5-8 tablespoons powdered milk
- 4 cups crushed mini-wheat cereal
Feta Salsa

Mix everything in a bowl
- 1/2 pound feta (crumbled)
- 1/2 cup kalamata olives (pitted and chopped)
- 1/2 cup sundried tomatoes in oil (drained and chopped)
- 2 cloves garlic (chopped)
- 1 tablespoon oregano (chopped)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
Casey's Spinach Dip

Defrost the spinach, drain Mix all ingredients together
- 2 - 16 oz Containers of Sour Cream
- 2 - Packets of Lipton Dry Vegetable Soup
- 2 - Boxes of Frozen Chopped Spinach
- 1 - Bread Bowl
- Extra bread for dipping - celery and/or carrot sticks
