Ham and Deviled Egg Breakfast Sandwiches

In a saucepan, cover the eggs with water and bring to a boil
- 8 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon hot sauce
- 3/4 teaspoon hot paprika
- 1/4 cup finely chopped dill pickles, plus 1 1/2 tablespoons brine from the jar
- 1 tablespoon thinly sliced scallion
- Kosher salt
- Freshly ground black pepper
- 1 cup torn frisée, light green parts only
- 1 1/2 teaspoons extra-virgin olive oil
- Four 1-ounce slices of baked country ham
- 4 English muffins, split and lightly toasted

- 4 boneless, skinless chicken breasts, thawed and tenderized slightly (if they are overly thick, slice them in half)

Ground Turkey and Bean Picadillo

Brown ground meat in a large skillet
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 lb ground meat (turkey)
- 1.5 cups pinto beans
- 1/2 cup raisins
- 1 granny smith apple, peeled and chopped
- 1 2.5 oz can chopped olives (green or black)
- 1 can diced tomatoes
- 1/3 cup red wine
- 2 hardboiled eggs, chopped
- salt and pepper
Butternut Squash and Caramelized Onion Galette

Make pastry: In a large bowl, combine the flour and salt
- For the pastry:
- 2 1/2 c. all-purpose flour
- 1/2 tsp salt
- 16 Tbsp (2 sticks) unsalted butter, cut into pieces
- 1/2 c. sour cream
- 1 Tbsp fresh lemon juice
- 1/2 c. ice water
- For the filling:
- 1 large butternut squash (about 3lbs)
- 2 Tbsp olive oil
- 1 to 2 Tbsp butter (if you have only non-stick, the smaller amount will do)
- 2 sweet onions, halved and thinly sliced in half-moons
- 1 Tbsp balsamic vinegar
- 1 tsp salt
- Pinch of sugar
- 1/4 tsp cayenne, or to taste
- 1 1/2 c. fontina cheese, cut into small cubes
- 2 tsp herbs de provence or fresh sage

1. In a small bowl set over a pan of simmering water (or in the microwave), melt the chocolate with the milk
- 2 ounces (55 g) bittersweet or semisweet chocolate, chopped
- 6 tablespoons (80 ml) milk, whole or low-fat
- 6 tablespoons (80 ml) Baileys liquor
- 1 medium-sized ripe banana, peeled*, and cut into chunks
- 1 tablespoon (15 ml) dark rum
Swiss Chard and Caramelized Onion Tacos

Slice the chard into 1/2-inch ribbons
- 12 oz. bunch of Swiss chard, thick lower stems removed (10 oz. cleaned spinach can be used instead)
- 1 1/2 tbl. oil, lard or bacon drippings
- 1 large onion, thinly sliced
- 3 garlic cloves, finely chopped
- 1 tsp. red pepper flakes (add more or less depending on how spicy you like it)
- 1/2 cup chicken or vegetable broth (water works too)

- 1 cup (4 ounces) Queso Fresco or other fresh cheese such as feta or goat cheese
