Caribbean Coconut Cream Pie

Prepare glass pie dish -In bowl of food processor, add graham crackers, salt, nuts, and grind fine
- Crust:
- 9 full graham cracker sheets
- 1/3 c. macadamia nuts (unsalted)
- 1/3 c. sweetened flaked coconut
- 1/4 c. unsalted butter, melted
- 1/2 tsp vanilla extract
- pinch salt
- Cream:
- 3/4 c. sugar
- 2 large eggs
- 3 egg yolks
- 5 Tbsp flour
- 1/4 tsp cornstarch
- 2 c. coconut milk (unsweetened)
- 2 c. sweetened flaked coconut
- 2 tsp vanilla extract
- juice from 1 lime
- zest from 3/4 lime
Crispy Sesame Shrimp

- 3/4 * 3/4 cup herb-seasoned stuffing mix (such as Pepperidge Farm), crushed
- 1 * 1 teaspoon sesame seeds
- 1/4 * 1/4 teaspoon paprika
- 1/8 * 1/8 teaspoon salt
- 1/8 * 1/8 teaspoon garlic powder
- 1/8 * 1/8 teaspoon black pepper
- 1 * 1 large egg white, lightly beaten
- 10 * 10 large shrimp, peeled and deveined (about 3/4 pound)

Stir Fry Basil Chicken

Heat the oil in a large non-stick skillet over medium heat
- 1 tablespoon canola oil
- 3 garlic cloves, finely minced
- 1/4 teaspoon – 1/2 teaspoon red pepper flakes (depending on how spicy you like it – I used 1/4 teaspoon and it perfectly warm but not too spicy)
- 1 yellow (or other sweet) onion, cut in half and sliced in thin half moon strips
- 2 boneless, skinless chicken breasts (about 1 1/2 pound), cut into bite-size pieces
- 1/4 cup oyster sauce
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 bunch fresh basil (about 1/2 cup), torn into pieces
- 2 large tomatoes, chopped
Orzo with Garlicky White Beans and Chicken Sausage

In a large saute pan or 3
- 4 cloves garlic, smashed and chopped roughly
- 3 tablespoons olive oil
- 8 fresh sage leaves, washed and torn
- 1/2 tsp fresh oregano leaves
- 2 or 3 leeks, washed carefully and chopped
- 3 spicy italian chicken sausages, sliced in rounds (the ones I used were fully cooked)
- 1/2 cup wine or pasta water
- 1 can white beans, rinsed and drained
- 1/2 lb orzo
- salt
- parmesan and lemon wedges for serving
Creamy Crawfish Pasta

Cook linguine according to package directions; drain
- 1 (8-ounce) package linguine
- 1/2 cup butter
- 1/3 cup all-purpose flour
- 1 bunch green onions, finely chopped
- 1 small onion, minced
- 4 garlic cloves, minced
- 1/2 green bell pepper, minced
- 2 celery ribs, minced
- 1 chicken bouillon cube
- 1 pint whipping cream
- 1 (2-pound) package frozen crawfish tails, thawed*
- 1 (10-ounce) can diced tomatoes and green chilies, drained
- 1 tablespoon Creole seasoning
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- Dash of Hot sauce (optional)
- Shredded Parmesan cheese
- Garnish: chopped fresh parsley
French Onion Soup

- 6 tablespoons honey
- 5 tablespoons lime juice (1 large lime)
- 1 tablespoons chili powder
- 1/2 teaspoon garlic powder
- 1 pound chicken, cooked and shredded (I used 3 small chicken breasts)
- 8-10 flour tortillas
- 1 pound monterey jack cheese, shredded
- 16 ounces green enchilada sauce
- 1 cup heavy cream
