In a small saucepan bring wild rice and water to a boil
- 1/4 cup wild rice
- 3/4 cup water
- 2 tablespoons olive oil
- 2 teaspoons butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, shredded
- 1 stalk celery, diced
- 1 small zucchini, diced
- 1/4 cup flour
- 4 cups low-sodium chicken broth
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 bay leaf
- 1/2 teaspoon dried chives
- 1/2 teaspoon dried thyme
- 1/4 teaspoon sage
- 1/8 teaspoon freshly grated nutmeg
- 3/4 teaspoon yellow curry powder
- 2 cups shredded chicken breast
- 2 teaspoon fresh, minced parsley
Veal and Pork Meatballs with a Carrot Sauce

- 3 tablespoons minced garlic
- 2-3 tablespoons of mild flavored oil (olive, canola, vegetable)
- 1.25 lbs ground turkey or ground chicken or ground pork
- 1/2 lb of french green beans (the skinny kind), cut into 1/2 inch pieces (or you can substitute 1 can of water chestnuts, chopped)
- 1/3 cup hoisin sauce (my preference is Lee Kum Kee Vegetarian which has NO artificial color in it)
- 2 tablespoons oyster sauce
- For wrapping
- 1 bunch of romaine lettuce, leaves separated and washed
- 1/4 cup cilantro finely chopped
- 1 cup of cucumbers, diced (use Persian cucumbers, Japanese cucumbers or English cucumbers)
- 3 tablespoons sambal oelek or chili garlic sauce (available at your local Chinese supermarket.)
- Optional toppings
- 1/4 cup of chopped peanuts
- 1/2 cup washed fresh mung bean sprouts

- 1/2 * 1/2 onion, diced
- 2 * 2 cloves garlic, minced
- 2 * 2 inch fresh ginger, minced
- 1 * 1 jalapeno, sliced, de-seeded as desired (optional)
- 1 1/2 * 1 1/2 lb salmon, cut into fillets
- 1/4 * 1/4 cup low sodium soy sauce
- 1/4 * 1/4 cup kecap manis sedang, medium sweet soy sauce, or “black sauce”
- 2 * 2 green onions, diced
- 2 * 2 tsp fried onions or fried garlic for garnish
