Turkey Chipotle Chili with Pepper Jack Cheese Corn Cake Toppers

Heat deep skillet or wide pot over medium high heat
- 2 * 2 tablespoons extra-virgin olive oil, corn oil or vegetable oil
- 2 * 2 pounds ground turkey breast
- 1 * 1 medium onion, chopped
- 3 * 3 cloves garlic, chopped
- 1 * 1 rounded tablespoon chili powder, a palm full
- 2 * 2 chipotles in adobo, chopped, found on Spanish/Mexican foods aisle or, 1/2 cup hot chipotle salsa may be substituted
- * Salt
- 1 * 1 cup Mexican beer
- 2 * 2 cups chicken stock
- 1 * 1 (28-ounce) can chopped stewed tomatoes
- 1 * 1 can red kidney beans, drained
- 1 * 1 (8 1/2-ounce) package corn muffin mix (recommended: Jiffy Mix) prepared to directions on box for corn cakes
- 1 1/2 * 1 1/2 cups shredded pepper jack cheese, 8 ounces
- 2 * 2 tablespoons butter

Position a rack in the lower third of the oven and heat oven to 325 degrees F
- Crust:
- 6 * 6 tablespoons unsalted butter, melted
- 1 1/2 * 1 1/2 cups crushed graham cracker crumbs
- 2 * 2 tablespoons sugar
- * Pinch fine salt
- Brownie:
- 8 * 8 tablespoons (1 stick) unsalted butter
- 4 * 4 ounces unsweetened chocolate, chopped
- 1 * 1 cup packed light brown sugar
- 3/4 * 3/4 cup white sugar
- 1 1/2 * 1 1/2 teaspoons pure vanilla extract
- 1/2 * 1/2 teaspoon fine salt
- 4 * 4 large cold eggs
- 1 * 1 cup all-purpose flour
- Topping:
- 4 * 4 cups large marshmallows
Chicken Tortilla Casserole

Heat the broiler and adjust rack to about 6 inches from heating source
- 2 * 2 boneless, skinless chicken breasts, trimmed
- 2 * 2 Tablespoons vegetable oil
- 1 * 1 shallot, minced (about 3 Tablespoons)
- 2 * 2 garlic cloves, minced
- 1-2 * 1-2 tablespoons minced chipotle peppers in adobo sauce (I use 1 pepper)
- 1 3/4 * 1 3/4 cups chicken broth
- 5 * 5 cups tortilla chips, broken into pieces
- 1 * 1 tomato, cored, seeded, and chopped
- 4 * 4 ounces sharp cheddar, shredded (1 cup)
- 2 * 2 Tablespoons chopped fresh cilantro
Chicken Tikka Masala

Combine all marinade ingredients
- Marinade:
- 3 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 1 tablespoons lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 2 teaspoons cayenne pepper (Kylie substitutes paprika for the cayenne - next time I'll do that or cut it down to 1/2 teaspoon)
- 2 teaspoons black pepper
- 1 tablespoons minced fresh ginger (I didn't have this on hand so I left it out)
- 1 teaspoon salt
- Sauce:
- 1 tablespoon butter
- 1 clove garlic, minced
- 1 jalapeno pepper finely chopped
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 1 8-oz can tomato sauce
- 1 cup cream
- 1/4 cup chopped cilantro

- 1 pound yellow-fleshed potatoes, such as yukon gold, cut into cubes

- 2/3 cup miniature semisweet chocolate chips
- Cookie Dough:
- 5 tablespoons butter, at room temperature
- 1/3 cup packed light brown sugar
- 3 tablespoons granulated sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour (I found the cookie dough was a bit stiff with this much flour, next time I think I'll cut it down by 1/8th of a cup)
- 1 cup miniature semisweet chocolate chips
- Filling:
- 10 ounces cream cheese, at room temperature
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
