Stuffed Green Peppers II

In a large skillet or medium stock pot, brown the beef and onion over medium heat
- 1 1/2 pounds lean ground beef
- 1 onion, chopped
- 3/4 cup uncooked instant rice
- 3/4 cup water
- 1 (14.5 ounce) can peeled and diced tomatoes with juice
- 1 (14.5 ounce) can stewed tomatoes, chopped
- salt and pepper to taste
- 6 large green bell peppers
- 1 (16 ounce) jar spaghetti sauce
Honey-Brined Fried Chicken Breasts

Mix cold water, kosher salt, and honey in a large bowl; stir until salt dissolves
- 3 cups cold water
- 1/4 cup kosher salt
- 1/4 cup honey
- 4 boneless skinless chicken breast halves
- 1/4 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon black pepper
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
- cayenne pepper to taste
- vegetable oil for frying
Sweet Basil Tomato Sauce

Combine diced tomatoes, crushed tomatoes, onion, basil, and garlic in a saucepan; bring to a boil
- 2 (14.5 ounce) cans petite diced tomatoes
- 1 (28 ounce) can crushed tomatoes
- 1 onion, finely diced
- 3 tablespoons dried basil, or to taste
- 2 cloves garlic, pressed

- 1/4 cup butter
- 4 large tart apples - peeled, cored and sliced 1/4 inch thick
- 2 teaspoons cornstarch
- 1/2 cup cold water

- 1/2 teaspoon ground cinnamon

- 8 ounces pasta
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/2 cup whole corn kernels, cooked
- 4 tomatoes, chopped
- 1/2 cup chopped green onions
- 1 teaspoon dried basil
- salt to taste
- ground black pepper to taste
- 1 tablespoon grated Parmesan cheese
- 2 teaspoons chopped fresh basil (optional)
