Crock Pot Cranberry Chicken

Combine all ingredients in a gallon-sized freezer bag
- ◦2 lbs chicken breast
- ◦1/4 cup dried minced onion
- ◦1 (16 oz) can whole cranberry sauce
- ◦1 cup BBQ sauce (I use Sweet Baby Rays)
Nana's Sheet Cake

See above in ingredients
- Bring to boil:
- 1 stick of butter
- 1 cup of water
- 4 TBS of Cocoa
- Remove from heat and add to:
- 2 cups of flour
- 2 cups of sugar
- 1 tsp of salt
- 1 tsp of backing soda
- Beat in :
- 2 eggs
- 1/2 cup of sour cream
- Pour into large greased 15.5" x 10.5" pan.
- Bake 20 mins 350 degrees
- Let cool 10 mins and then ice cake.
- Icing recipe:
- Bring to boil:
- 4 TBS cocoa
- 6 TBS milk
- 1 stick butter
- Remove from heat and add:
- 1 pound of confectioners sugar
- 1 tsp vanilla
- 1 cup of chopped walnuts (optional)
- Pour over #cake and spread. #Enjoy!!
Vanilla Buttercream Icing

In a standing mixer fitted with a whisk, mix together sugar and butter
- 3 cups confectioners' sugar
- 1 cup butter
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons whipping cream
Soy Sauce Substitute

In small sauce pan combine and boil gently uncovered about 5 minutes or until mixture is reduced to 1/2 cup
- 2 Tbsp Sodium-free beef bouillon powder/granule
- 2 Tbsp Red Wine Vinegar
- 2 Tbsp Brown Sugar Substitute
- 1 tsp Ground Ginger
- Dash Black Pepper
- Dash Garlic Powder
- 1 cup water
Garlic Mushooms

Preheat the oven to 200C/400F/gas mark 6
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp corn or vegetable oil
- 1/4 c unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice
- salt and freshly ground black pepper to taste
- 1/4 c fresh breadcrumbs
3-Ingredient Strawberry Compote

Place the strawberries, lemon juice, and 2 tbsp
- 3 cups very ripe diced strawberries
- 2 tbsp lemon juice, freshly squeezed
- 2-3 tbsp sugar
Crock Pot Pulled Port

Combine all ingredients except onion in bowl, rub onto pork
- ◦4-5 lbs pork butt/shoulder
- ◦1 tablespoon ground black pepper
- ◦1-2 teaspoons cayenne pepper
- ◦2 tablespoons chili powder
- ◦2 tablespoons ground cumin
- ◦2 tablespoons brown sugar
- ◦1 tablespoon dried oregano
- ◦4 tablespoons paprika
- ◦2 tablespoons salt
- ◦1 tablespoon granulated sugar
- ◦1 large onion – sliced thin
- ◦BBQ Sauce (optional) We prefer Sweet Baby Rays
Meringue Cookies with Filling

Delicious Meringue Cookies are topped with the filling of your choice, chocolate or a compote of blueberry or peach
- 3 3 3 large egg whites
- 1/4 1/4 1/4 teaspoon cream of tartar
- 3/4 3/4 3/4 cup superfine sugar
- 1/4 1/4 1/4 teaspoon pure vanilla extract
American Buttercream Frosting

With a hand or stand mixer, beat the butter, mascarpone and heavy cream until it becomes fluffy
- If you can't find mascarpone, just replace it with 8 ounces of butter.
- 3 sticks (1-1/2 cups) unsalted butter
- 8 ounces mascarpone
- 1/4 cup heavy cream (plus more for thinning, if necessary)
- 2 cups powdered sugar
CHEESY BACON JALAPENO CORN DIP

- 8 strips bacon
- 2 (11 oz) cans whole kernel sweet corn, drained
- 1 jalapeno, seeded and minced
- 8 oz cream cheese, softened
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon salt
- Dash of cayenne pepper
- 1/4 cup fresh basil, chopped
- Parmesan cheese, to taste
