Shrimp in Jalapeno Cream Sauce

Shrimp in Jalapeno Cream Sauce is a new favorite meal and the flavor is out of this world!!!
- For the Sauce:
- 1 pound fresh shrimp, shelled and deveined
- 1 teaspoon of sea salt and pepper or more to taste*
- 2 tablespoon of butter
- the sauce tends to be a bit spicy, so the shrimp needs to be seasoned with a light hand
- 2 Tablespoons unsalted butter
- 1/2 cup finely sliced onions
- 1/2 cup dry white wine
- 1 cup heavy (whipping) cream
- 2 to 3 pickeld Jalapeño chilies, thinly sliced
- 1 tablespoon pickling liquid from Jalapeño, or to taste
- 1/4 cup sour cream
- Salt and freshly ground black pepper to taste
Roasted Chicken with Lemon Garlic Green Beans

Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil
- ◦4 tablespoons olive oil
- ◦2 lemons, 1 thinly sliced, 1 juiced
- ◦4 cloves garlic, minced
- ◦1 teaspoon kosher salt
- ◦1/2 teaspoon freshly ground black pepper
- ◦3/4 pound green beans
- ◦8 small red potatoes, quartered
- ◦3-4 chicken breasts

Preheat oven to 450 degrees F
- 1 large cauliflower, cut into chunks
- 2 cups (8-ounce) fat-free, shredded, mozzarella cheese, divided
- 2 eggs, lightly beaten
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/8 teaspoon salt (optional)
- 1/8 teaspoon black pepper

- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 Granny Smith apples, peeled, cored and chopped
- 8 fresh sage leaves
- 2 cups thick-cut white bread cubes, crusts removed
- 1 egg, beaten
- 2 tablespoons butter
- Salt and pepper
- 1/2 to 1 cup chicken broth, plus more if needed

- 3 tablespoons olive oil
- 1/2 pound sliced pancetta, diced
- 4 shallots, thinly sliced
- 1 pound Brussels sprouts, trimmed and halved
- 8 baby Yukon gold potatoes, quartered

- 1 lemon, juiced

- 6-8 bone-in, skin-on chicken thighs*
- Kosher salt and freshly ground black pepper, to taste

- 2 medium leeks (white and pale green parts only), thinly sliced (or 3 shallots, sliced)
