Garlicky Chicken Parmesan

Preheat the oven to 350 degrees F
- Marinara Sauce:
- 8 boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1 cup flour
- 3 large eggs
- 3 /4 cup milk
- 7 cloves garlic, minced
- 2 cups panko breadcrumbs
- 2 teaspoons garlic salt
- Vegetable oil, for frying
- 3 /4 cup Marinara Sauce, recipe follows
- 1 /4 cup grated Parmesan
- 1 1/2 cups shredded mozzarella
- 1 /4 cup extra-virgin olive oil
- 1 small onion, chopped
- 1 clove garlic, chopped
- 1 carrot, peeled and finely chopped
- 1 stalk celery, chopped
- Sea salt and freshly ground black pepper
- One 32-ounce can crushed tomatoes
- 1 teaspoon dried oregano

Directions Put rack on lowest position in oven
- 1 9-inch deep dish pie crust, I use Marie Callender's frozen. No need to defrost. No need to prebake
- 1 1⁄2 cups sugar
- 2 tablespoons butter, melted
- 1 ⁄3 cup all-purpose flour
- 1 ⁄4 teaspoon salt
- 1 ⁄2 teaspoon grated lemon peel, I usually add more
- 5 tablespoons fresh lemon juice, please use fresh
- 3 eggs, separated
- 1 1⁄4 cups milk, I use 2%
- Add berries of choice as compote on top

Sauté onion in butter. Set aside
- 1 tablespoon melted butter
- 1/2 medium chopped onion
- 1/4 cup melted butter
- 1/4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 1/2 lb fresh broccoli
- 1 cup carrot, julienned
- 1/4 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
- salt and pepper
Homemade Ravioli with Tomato Sauce

Sauce-In a saucepan, or crock pot, combine all ingredients
- Sauce
- 1 ⁄4 cup vegetable oil
- 1 cup finely chopped onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 1 (5 1/2 ounce) can tomato paste
- 1 1⁄2 cups water
- 1 teaspoon salt
- 2 tablespoons parsley
- 2 teaspoons sugar
- 1 tablespoon oregano
- 1 teaspoon basil
- 1 ⁄4 teaspoon pepper
- Noodles
- 3 cups flour
- 4 eggs
- 1 ⁄4 cup water
- Filling
- 3 ⁄4 lb ground beef, cooked
- 4 tablespoons cheddar cheese
- 1 tablespoon fine breadcrumbs
- 1 ⁄2 teaspoon salt
- 1 egg, beaten slightly

Directions: In a large bowl, stir water, honey and yeast together
- 1 cup Warm Water
- 1 Tablespoon Honey
- 1 envelope Active Dry Yeast (2 1/4 Teaspoons)
- 1 teaspoon Salt
- 3 cups Bread Flour
- Olive Oil, For Greasing Surfaces
- 1/3 pounds Sharp White Cheddar, Or Any Other Cheese You Prefer
- 1/2 cups Garlic Butter

- ◦2-4 Chicken Breasts
- ◦3 Garlic Cloves, smashed and chopped
- ◦1 Teaspoon Dried Basil
- ◦1/2 cup Soy Sauce
- ◦1/2 cup Ketchup
- ◦1/3 cup Honey
- ◦2 cups carrots (or choice of veggie)
Mock Potato Salad (Cauliflower)

Chop up the cauliflower heads and place in pot of water to boil
- 2 medium head (5-6" dia) Cauliflower, raw
- 1-1/2 cups Mayonnaise, regular
- 4 medium slices(yield after cooking) Bacon or side pork, fresh, cooked - crumbled
- 2 medium stalk (7-1/2" - 8" long) Celery, raw - diced small
- 1 teaspoon Mustard
- 4 large Egg, whole, boiled - chopped up
- 4 tablespoons dill relish
- 1 cup, chopped Onions, yellow, sauteed

- 1 large chicken breast
- 8 ounces cream cheese-softened
- 1 ear corn, kernels cut off the cob
- 2 green onions, thinly sliced
- 1 garlic clove, minced
- Salt and pepper, to taste
- 1 /2 tablespoon extra-virgin olive oil
- 2 cups all-purpose flour
- 1 egg
- 1 tablespoon whole milk
- 1 cup plain Italian bread crumbs
Crock-Pot Beef Stroganoff

Cook meat & let it cool. Add all ingredients to a gallon size freezer bag except egg noodles
- ◦2 pounds of cubed beef stew meat or 4 cups of cooked ground beef
- ◦2 cans of cream of mushroom soup
- ◦1 cup chopped onion
- ◦2 T Worcestershire sauce
- ◦1/2 c water
- ◦1 c. sour cream
- ◦2T minced garlic
- ◦packet of onion soup mix
- ◦chopped mushrooms (optional)
- ◦egg noodles (to serve over the day you cook)
