Apple Pie

1. Lightly flour a large piece of waxed paper; place a disk of dough in center
- ¼ cup all-purpose flour (spooned and leveled, plus more for rolling dough)
- 1 recipe Basic Pie Dough (for Apple Pie)
- 2 tablespoons lemon juice (freshly squeezed, from 1 lemon)
- 4 pounds apples (such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix, 8 to 10)
- peeled and cut into 1/4 inch slices)
- ¾ cup sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2 tablespoons unsalted butter (cut into small pieces)
- Pie Crust (double for two)
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1/4 cup veg. shortening
- 1/4 cup butter (plus more for buttering pie plate
- 4-5 Tbs ice water

- 8 ounces, weight Cream Cheese
- 1 stick Butter
- 1/2 cups Confectioners Sugar (Powdered)
- 2 Tablespoons Cocoa Powder (3 Tablespoons For A Darker Chocolate)
- 1 teaspoon Vanilla Extract

Pasta with Eggplant Sauce

1. In a large skillet cook sausage over medium-high heat until brown
- 8 oz bulk hot Italian sausage
- 1 medium eggplant
- 1 28 ounce can Italian-style whole peeled tomatoes in puree, cut up
- 8 ounces fresh cremini and/or button mushrooms, sliced
- 1 6 ounce can Italian-style tomato paste
- 1/2 cup chopped onion (1 medium)
- 1/2 cup dry red wine
- 6 cloves garlic, minced
- 1/2 cup assorted snipped fresh herbs (such as basil, oregano, thyme,
- and/or Italian [flat-leaf] parsley)
- 1/3 cup pitted Kalamata or other Italian olives, sliced
- Salt and ground black pepper (optional)
- 6 cups hot cooked penne pasta
- 1/4 cup grated or shredded Parmesan cheese (1 ounce)
- 2 tablespoons toasted pine nuts (optional)

Preheat barbecue grill to high
- Dressing Ingredients:
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large orange bell pepper
- (or use any combination of colors you have available)
- 1 can (6 oz. drained) black olives or Kalamata
- 2 T capers, rinsed and drained
- 2 T + 2 tsp. good quality olive oil
- 1 T + 1 tsp. Spanish Sherry vinegar (or substitute white wine vinegar or white balsamic vinegar)
- 1 tsp. caper brine
- 2-3 T chopped fresh marjoram (or substitute fresh basil or oregano)
- 1/2 tsp. minced garlic
- salt and fresh ground black pepper to taste
