Braised Red Cabbage with Apple and Onion

This side goes well with roasted pork or turkey
- 1 tablespoon butter
- 1 medium onion, halved and thinly sliced
- 2 Gala or Fuji apple, halved, cored, and sliced
- 1/2 head red cabbage, cored, quartered, and thinly sliced
- Coarse salt and ground pepper
- 3 tablespoons cider vinegar
- 4 teaspoons sugar
- 1/2 cup water
Tuna and Fruit Salsa

1. Lightly brush tuna steaks and peach halves with olive oil; sprinkle with salt and pepper
- 4 5 - 6 ounces fresh tuna steaks, 1-inch thick
- 2 fresh ripe peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and cracked black pepper
- 2 tablespoons apricot preserves
- 1 tablespoon vinegar
- 1/2 cup fresh raspberries
- 3 green onions, thinly sliced
Apple Pie

1. Lightly flour a large piece of waxed paper; place a disk of dough in center
- ¼ cup all-purpose flour (spooned and leveled, plus more for rolling dough)
- 1 recipe Basic Pie Dough (for Apple Pie)
- 2 tablespoons lemon juice (freshly squeezed, from 1 lemon)
- 4 pounds apples (such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix, 8 to 10)
- peeled and cut into 1/4 inch slices)
- ¾ cup sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2 tablespoons unsalted butter (cut into small pieces)
- Pie Crust (double for two)
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1/4 cup veg. shortening
- 1/4 cup butter (plus more for buttering pie plate
- 4-5 Tbs ice water

Carmel Apple Strudel

Preheat oven to 375°. In a large saucepan, combine the first six ingredients

- 5 medium apples, peeled and chopped (5 cups)
- 3/4 cup apple cider or juice
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1 frozen puff pastry sheet, thawed
- 1/4 cup fat-free caramel ice cream topping
- 1 Eggland's Best Egg
- 1 tablespoon water
- 1 tablespoon coarse sugar
- Sweetened whipped cream and additional caramel ice cream topping, optional

Blend first three ingredients
- Spray pie dish with non stick spray.
- 3 eggs
- 1 1/2 cup milk
- 3/4 cup bisquick
- 1/2 cup chopped onion
- 1 10 oz pkg frozen spinach chopped, all liquid squeezed out.
- 4 oz mushroons, sliced
- 1/2 cup diced ham
- 1 cup shredded swiss cheese
- salt & pepper to taste.

In a colander, drain zucchini, squeezing to remove excess liquid
- 2 medium zucchini, grated
- 2 eggs
- 1/4 cup whole wheat flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dried basil
- 1 large onion, finely chopped
- 1 medium potato, grated
- 1 medium carrot, grated
- 1/3 cup frozen corn, thawed
- 1/4 cup shredded sharp white cheddar cheese
- oil for frying
- cracked black pepper and sour cream, optional
Cranberry Swirl Cheesecake

Heat oven to 325 degrees. Butter a 9" springform pan and wrap outside in 2 layers of foil
- 3 TBS butter
- 1 c graham cracker crumbs
- 4 8oz packages cream cheese
- 1 c sugar
- 3 TBS cornstarch
- 2 TBS lemon juice
- 1/2 tsp lemon zest
- 1 tsp vanilla extract
- 3 eggs
- 1 c sour cream
- 1 c jellied cranberry sauce
