Emeril's Tarter Sauce

In a bowl, fold together the ingredients
- 1 cup mayonnaise
- 2 tablespoons chopped green onions or scallions (green part only)
- 2 tablespoons drained sweet pickle relish
- 1 tablespoon drained capers (chopped, if large)
- 1 tablespoon minced fresh parsley leaves
- 2 teaspoons Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon minced fresh tarragon
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne

- ingredients
- 36 oysters, washed and scrubbed
- green onion butter
- 1 cup (two sticks) unsalted butter, room
- temperature
- 1/4 cup minced scallions
- 1/2 tablespoon soy sauce
- 1 clove garlic, finely minced
- 3/4 tablespoon lemon juice
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Hazelnut Crusted Grilled Salmon with Mixed Berry Sauce

Place berries in saucepan along with the wine
- Sauce:
- 8 oz seasonal mixed berries (strawberries, blueberries & blackberries)
- 1/4 c red wine
- 1/4 c brown sugar
- 1 tsp Dijon-style mustard
- 2 oz butter, cut in small pieces
- 1 large salmon filet, skinned 24-30 oz
- 1/4 c olive oil
- 1 c toasted hazelnuts, finely chopped
Roasted Winter Vegetables With Cheesy Polenta

Preheat oven to 500°F
- 4 cups cauliflower florets, (see Tip)
- 4 cups cubed peeled butternut squash, (1 1/2-inch chunks)
- 1 medium onion, sliced
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- 3/4 teaspoon freshly ground pepper, divided
- 1/4 teaspoon salt
- 2 1/2 cups vegetable broth, or reduced-sodium chicken broth
- 1 cup water
- 3/4 cup cornmeal
- 1 teaspoon chopped fresh rosemary, or 1/2 teaspoon dried
- 2/3 cup finely shredded Parmesan cheese, preferably Parmigiano-Reggiano

- 2 cups sifted flour
- 2 1/4 tsp baking powder
- 1 tsp salt
- 1/4 cup sugar
- 1 egg, beaten

Strawberry Cream Cheese Cobbler

Cream cheese gives this cobbler some added richness, so that it doesn't need extra whipped cream or ice cream
- 1 stick (1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 quarts whole strawberries, capped and washed
- 4 ounces cream cheese, cut in small pieces
- Plain Greek yogurt or vanilla ice cream for serving, optional

1. Trim and discard discolored stem ends from mushrooms; thinly slice mushrooms
- 1 pound mushrooms, rinsed
- 2 tablespoons butter or olive oil
- 1/2 cup chopped onion
- 1 can (7 oz.) diced green chilies
- 2 tablespoons all-purpose flour
- 3/4 cup fat-skimmed chicken broth
- 1/2 cup sour cream
- 1 tablespoon lime juice
- 1 pound sole fillets

The cod is cooked with tomatoes, bell pepper, onions, potatoes and plenty of parsley
- Prep time: 10 minutes Cook time: 25 minutes
- 2 lbs fresh cod,
- fillet 1 large onion,
- finely sliced 1 large tomato,
- finely sliced 6 medium potatoes,
- finely sliced 2 bell peppers,
- finely sliced 2 garlic cloves,
- finely sliced 1 bay leaf
- 1 bunch of parsley
- 1 cup dry white wine
- 1/4 c Olive oil
- 2 tablespoons paprika

- 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
- 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
- 2 tbsp olive oil
- 1 tbsp breadcrumbs (I use Italian style)
- Sea salt, to taste
