Grilled Chicken Burritos

The relish lends an old fashioned sweet and vinegary flavor
- Sweet Pepper Relish
- 1/2 c cider vinegar
- 1 TBS sugar
- 1 TBS chopped peeled fresh ginger
- 3 cloves garlic, coarsely
- 1 serrano chile, seeded & chopped
- 1/2 tsp cumin seeds
- 1/2 tsp salt
- 1 bay leaf
- 1 ea red & green bell pepper, cored, seeded & chopped
- 1 cup coarsely chopped red onion
- 4 boneless skinless chicken breast halves
- 1 recipe Three Citrus Habanero Marinade (see below)
- 4 flour tortillas (8-10 inches in diameter
- 2 small avocados, halved, pitted, peeled & cut cross wise into 1/4 in wide slices

- 1 tsp grated lemon zest
- 1 tsp grated lime zest
- 1 tsp grated orange zest
- 1/3 c lemon juice
- 1/3 c orange juice

Razor Clam Saute

•Dredge the razor clam meat, shake off excess flour •In a large frying pan, sear the clams in canola oil until
- 1/2 pound razor clam meat cut into bite size
- 3 oz asparagus cut into 1 inch pieces
- 3 oz. thin sliced crimini mushrooms
- 1/3 cup all purpose flour
- 1/4 stick of butter
- 3 tablespoons of canola oil
- 1/2 cup of dry white wine
- 3 tablespoons of soy sauce
- 1/2 lemon cut into wedges

Expresso Flan

- Caramel:
- 1/2 cup Caramel -more if desired (recipe under directions)
- 1/3 cup melted butter -for brushing the sides of oven safe ceramic dishes
- 5 Eggs
- 2 Egg yolks
- 1 cup sugar
- 1 teaspoon pure Vanilla Extract
- 1 1/4 cups Heavy cream
- 1 cup Milk
- Pinch of Salt
- 4-6 Tablespoons hot brewed Espresso
- 3/4 cup Water
- 1 cup Sugar
Bailey's Irish Cream Cheesecake

For the crust: Preheat the oven to 325 degrees
- Crust:
- 1 1/2 c chocolate wafers
- 1 1/4 cups(about 5 ounces) pecans
- 1/4 cup granulated sugar
- 6 Tablespoons (3/4 stick) unsalted butter, melted
- Filling:
- 1 1/2 pounds cream cheese at room temperature
- 3/4 cup granulated sugar
- 3 eggs
- 1/3 cup Bailey' Original Irish Cream liqueur
- 1 teaspoon vanilla
- 3 ounces imported white chocolate, such as Lindt, broken into pieces
- Topping:
- 1 1/2 cups sour cream
- 1/4 cup confectioners'sugar
- 1 1/2 ounces imported white chocolate, grated
- 24 pecan halves
Clam Chowder (Roni's version)

1) Cook the bacon until brown in a medium saucepan
- 6 thick slices bacon coarsely chopped (or bacon ends)
- 1 cup finely chopped onion
- 1 cup finely diced celery
- 2 cup finely diced potatoes
- 2 (6 1/2 ounce) cans minced clams (or fresh clams)
- 6 tbsp unsalted butter
- 6 tbsp flour
- 4 cups half-and-half, warmed
- 1 tsp kosher salt
- 1/2 tsp white pepper
- 1/2 c corn
- 1 tsp dried parsley
- 1/4 tsp dried thyme
- I used broth from steamed clams to boil vegetables (white wine, garlic and butter along with clam juices. (about 2 cups) or use bottled clam juice.
Chicken Alfredo Roll-Ups

Chicken alfredo roll-ups are a dreamy, creamy weeknight dinner masterpiece
- 3 tbsp. butter (plus more greasing the dish)
- 3 tbsp. flour
- 2 1/4 c. milk (preferably 2% or whole)
- Juice of 1 lemon
- 2 tsp. chopped parsley
- 2 garlic cloves, minced
- 2 tbsp. cream cheese, softened
- 2 c. shredded rotisserie chicken
- 1/2 c. finely grated Parmesan
- 8 cooked lasagna noodles
- kosher salt
- Freshly ground black pepper
Cilantro Pesto

Pulse twice or until coarsely chopped
- In a food processor:
- 1 1/2 c cilantro
- 1 2/3 c parsley
- 1 jalapeno chile, seeded and ribs removed
- 1 garlic clove
- 1/2 c olive oil
- 1 TBS lemon juice
- 1/4 tsp salt
Bittersweet Chocolate Caramel Tart

Preheat oven to 350 degrees F
- 1/2 cup butter, softened
- 2/3 cup sugar
- 1/3 cup unsweetened Dutch-process cocoa powder
- 1 egg yolk
- 1 teaspoon vanilla
- 1/2 teaspoon chocolate extract or flavoring
- 1 cup all-purpose flour
- 2 cups sugar
- 1/2 cup water
- 1/4 cup light-color corn syrup
- 1/2 cup whipping cream
- 1/2 cup butter, cut up
- 1/2 teaspoon vanilla
- 6 ounces bittersweet chocolate, finely chopped
- 3/4 cup whipping cream
- 1 - 2 teaspoons coarse sea salt (optional)
Bacon Mushroom Stuffed Zucchini

Spray pam on small baking sheet
- Two Medium zucchini cut in half lengthwise
- 1/2 onion chopped fine
- 1 cup mushrooms chopped fine
- 1 tbsp olive oil
- 1 cup shredded & chopped spinach
- 2 tbsp fresh parsley chopped fine
- 2 tbsp bread crumbs
- 1 tbsp bacon bits
- 1/2 cup finely chopped tomato, seeds removed (Roma works well)
- salt, pepper, garlic salt to taste
- Grated Pecorino Romano or Parmesan cheese
- A dab of garlic butter adds a nice flavor to filling and also rubbed on zucchini while baking.

- 3/4 cup Milk
- 3 tablespoons Butter (melted plus more for greasing pan)
- 3 tablespoons Lemon Oil
- 1 teaspoon Vanilla Extract
- Powdered Sugar for garnish
- 1 cup Olive Oil
- 1 Lemon (washed and cut into small pieces)
