- 1 small orange
- 2/3 cup cinnamon applesauce
- 1/4 cup balsamic vinegar
- 1/2 teaspoon ground cardamom or 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 pound chicken tenders
- Salt
- Ground black pepper
- 2 teaspoons vegetable oil
- Fresh thyme sprigs (optional)

- 4 small boneless skinless chicken breast halves, about 1 to 1 1/4 pounds
- 1 cup all-purpose flour, (spooned and leveled)
- Coarse salt and freshly ground black pepper
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/2 cup dry white wine
- 1/2 cup homemade chicken stock or canned low-sodium chicken broth
- Juice of 1/2 lemon
- 2 tablespoons capers, rinsed and drained
- 1/4 cup chopped fresh flat-leaf parsley
Chicken, Brie and Nectarine Flatbread

1. Preheat oven to 425 degrees F
- 4 7 inches flatbreads
- 1/4 cup peach preserves
- 2 cups shredded purchased roasted chicken*
- 4 ounces Brie, sliced
- 2 nectarines, pitted and sliced
- 4 thin red onion slices
- 3 cups arugula, baby lettuce, and/or spinach
- 1/4 cup bottledItalian salad dressing
LEMON CHEESE FILLED BUNDT CAKE

Preheat oven to 350 degrees
- FILLING:
- 1 pkg. butter yellow
- 3/4 c. apricot nectar
- 1/4 c. butter, softened
- 3 eggs
- 1 (8 oz.) pkg. cream cheese, softened
- 1/4 c. sugar
- 1 tbsp. lemon juice
- 1/2 c. flaked coconut
- GLAZE:
- 2 c. powdered sugar
- 2 tbsp. lemon juice
- 2 tbsp. apricot nectar
Apricot Almond Squares

Heat oven to 350 degrees. Spray 9x13-inch Baker with vegetable oil spray
- 1/2 c Butter or Margarine; Melted
- 1 pk (18.25-oz) Pillsbury Plus cake mix (yellow or white)
- 1/2 c Almonds; finely chopped with
- 1 c Apricot preserves for second layer
- FILLING
- 1/4 c Sugar
- 1 tsp Vanilla
- 1 pk (8-oz) cream cheese;
- 1 Egg
- 2 tbs Flour
- 1/8 tsp Salt
- 1/3 c Apricot preserves
- 1/2 c Coconut to be mixed with 1 cup of first layer.
Apple Pie

1. Lightly flour a large piece of waxed paper; place a disk of dough in center
- ¼ cup all-purpose flour (spooned and leveled, plus more for rolling dough)
- 1 recipe Basic Pie Dough (for Apple Pie)
- 2 tablespoons lemon juice (freshly squeezed, from 1 lemon)
- 4 pounds apples (such as Empire, Granny Smith, Gala, Cortland, Winesap, or a mix, 8 to 10)
- peeled and cut into 1/4 inch slices)
- ¾ cup sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2 tablespoons unsalted butter (cut into small pieces)
- Pie Crust (double for two)
- 1 1/2 cups all purpose flour
- 1/2 tsp salt
- 1/4 cup veg. shortening
- 1/4 cup butter (plus more for buttering pie plate
